    Minced pie were a family tradition growing up this time of year. My Mother, being from Canada, brought a few English dishes from her childhood with her after marriage and moving to the states.

    Hello Lily! I have watched several of your videos and noticed you have baked sourdough in both a Rofco and a Rackmaster. Could you please compare/contrast the two ovens and list your thoughts on the pros and cons of each

      What it boiled down to for me was:
      1) size... I only ever had the tiny B5 Rofco oven and needed to upgrade asap and Campbell was just launching the RM2020 and it looked fantastic
      2) the RM2020 has more deck space than the Rofco; it also produces a better overall bake; I 've heard from Rofco owners that you have to "shuffle" the breads/ goods round mid bake which obviously isn't ideal on busy days or any day!
      3) community: the RM2020 community of bakers all over the world has really been absolutely invaluable and so supportive of me and anyone in that group when it comes to advice: most specific details of baking/ business/ product costs etc etc and really has been absolutely wonderful
      4) the only real downside to the RM2020 is the preheat time of 2-2.5 hours; but this is easily solved by getting an electrician to install a timer connected to the oven (Rackmaster can recommend the specific one for you if you go ahead with the RM!)
