  • Hello! Enjoy Part 1 of this week's weight watchers weekly meal prep video from the groceries I picked up from Kroger and Aldi. These are healthy and flavorful recipes that you don't want to miss! Some of the items used for meal prep I already had on hand.
    -- Recipes --
    Turkey Burgers
    INGREDIENTS:
    • 2 lbs 93% lean ground turkey (Sub for 99% lean for lower points)
    • 2 Eggs
    • Salt to taste
    • Pepper to taste
    • Garlic powder to taste
    • Onion powder to taste
    • Italian seasoning to taste
    • 2 Tbsp Worcestershire sauce
    • 1 Tbsp extra virgin olive oil or avocado oil
    INSTRUCTIONS:
    1. Combine ground turkey, eggs, seasonings, and Worcestershire sauce in bowl and mix.
    2. Measure out 4 ounces of ground turkey and form into a patty. Repeat for remaining turkey.
    3. Add olive oil to nonstick skillet and cook turkey burgers until they reach an internal temperature of 165 degrees Fahrenheit.
    4. Once internal temperature is met, remove patties from skillet and allow to cool for 5 minutes.

    Crispy Baked Orange Tofu
    INGREDIENTS:
    • 2 Blocks extra-firm tofu
    • 1 Tablespoon extra-virgin olive oil or avocado oil
    • 4 Tablespoon cornstarch
    • ½ cup Panda Express orange sauce
    INSTRUCTIONS:
    1. Preheat the oven to 400 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper or non-stick aluminum foil to prevent the tofu from sticking.
    2. Drain the tofu and pat dry with a paper towel. While patting, press your palms gently to squeeze out some of the water.
    3. Cut the tofu into small cubes by slicing 5 times vertically and 4 times horizontally. Place the cubes into a mixing bowl.
    4. Drizzle tofu with the olive oil or avocado oil. Toss to combine. Sprinkle the starch over the tofu and toss the tofu until the starch is evenly coated, so there are no powdery spots remaining.
    5. Transfer the tofu onto your prepared baking sheet and arrange the tofu in an even layer. This will allow the tofu to crisp.
    6. Bake for 30 minutes, tossing the tofu halfway, until the tofu is deeply golden on the edges.
    7. Remove from oven and transfer tofu to nonstick skillet. Add in Panda Express orange sauce and mix until tofu is evenly coated.
