You can absolutely feel g-forces no matter the lateral direction of it- it moves your skin, organs, inner ear balance, and a bajillion other things that give you those cues of gs. The sim is undoubtably insanely cool just wanted to point out that the pressure in the seat is just one of the sensations of g-force.
One question, if I wanted to have a seat do the opposite of what the SIM is doing, like noise cancelling headphones do to reduce g forces in a passenger seat?
