I have been using something similar to your Herschel pouch with a bit of cushioning as my tech pouch. I can squish it in my bag really well I travel but I don't like looking at the mess or digging around to find what I want. So I like how the Bellroy compact kit is small, has got structure and organisation compartments.
I'd prefer the design of the compact for things that need to be kept in place like an audio interface and perhaps a mic. Just dumping everything is way better and stops a lot of stress.
I agree that I would rather have everything dumped in one spot as well. I also prefer flat-folding bags. These are more...medium-cased. Not quite hard cased but definitely not flat-cased so they take up a bit too much bulk.

I love Bellroy things. They really have a good eye for aesthetics.
