Best Cheesecake Recipe - Without Cream Cheese | Healthy Yogurt Cheesecake (With Oatmeal Crust)

- Light, silky, smooth n creamy, is what this Cheesecake is all about! It’s made with hung curd which is very easy to make at home and I’ve further healthified it by replacing sugar with jaggery.
And that’s not all, it’s crust is made with oat flour which pairs perfectly with this silky smooth yogurt cheesecake, making this melt in mouth dessert a blissful experience in every bite !
CHEESECAKE INGREDIENTS
*1 kg curd/ yogurt/ dahi/ दही
*1/3 cup coconut milk
*1/2 cup jaggery powder/ coconut sugar
*3 eggs
*3 tbsp rice flour or plain flour/ चावल का आटा/ मैदा
*1 tsp vanilla extract/ essence
CRUST INGREDIENTS
*1 1/2 cup oats
*3 tbsp coconut oil for healthier option or ghee/ butter can also be used.
*2 tbsp flaxseeds
*2 tbsp honey
INSTRUCTIONS
1- for hung curd, take a large bowl and place a cheesecloth over it. Pour in 1 kg curd/ yogurt, bring the edges together and tie the cloth. Then using some kind of support, hang the cloth along with the bowl, in your fridge for 24 hours and make sure there is enough gap between the cloth and the bowl, so that the dripping water / whey can collect in the bowl. Next day, when all the water / whey has drained off, you will get some nice thick and creamy hung curd.
2- for the crust, add flaxseeds in a blender to make a fine powder. Keep this powder aside and add oats in the blender to make oat flour. Transfer this oat flour in a large bowl, add in the flaxseed powder followed by honey and coconut oil. Give a good mix with with your hands. Crust mixture is ready and at this stage preheat the oven at 180°C/ 350°F for 10 minutes. Grease your springform pan nicely with oil. Add in the crust mixture and using a spoon press it evenly into the base of the pan. Bake the crust 180°C/ 350°F for 10 minutes. Keep it aside and allow to cool completely.
3- Now add in the hung curd in a food processor ( I’m using my food processor with a whisking attachment. You can use hand mixer as well ) followed by jaggery powder and give a good mix. Add coconut milk, rice flour, vanilla extract and mix again. Scrape down the sides whenever necessary to fully incorporate the mix . Now add eggs and give a quick mix ( do not over mix ).
4- At this stage preheat the oven at 180°C/ 350°F for 10 minutes. Pour the batter on your cooled crust. Take a large piece of aluminium foil, place your springform pan in the centre and wrap the foil around the pan. (Aluminium foil prevents water from getting inside the pan during water bath).
5- Place the springform pan on a large baking dish and put it in the oven. Now fill the dish about an inch with hot water ( hot water protects the cheesecake from cracking and lends a smooth texture). Bake the cheesecake at 180°C/ 350°F for 60 minutes. After 60 minutes turn off the oven and let the cheesecake rest in the hot water for 1 hour. Now take it out from the oven. Allow to cool completely before refrigerating overnight to fully set.
6- run a knife around the edges to loosen it up and unmold the cake. Garnish it with your favourite fruits, slice it up and enjoy !!

What is the reason of bake cheese cake left in oven for 1 hour in water after baking time finish and cheese cake is ready?
Tell the baking time for half kg yogurt. The baking time for 1 kg yogurt is 60 minutes so for half kg yogurt baking time will be 30 minutes r 60 minutes?
Can I substitute rice flour with almond flour?
Yes almond flour will work as well.
