BAKED YOGURT CHEESECAKE RECIPE (EGGLESS) RECIPE:
INGREDIENTS:
For the Cookie Crust:
150 grams Parle - G (or any cookies of your choice), crushed finely
50 grams salted butter, melted (if using unsalted butter, add a pinch of salt)
For the Cheesecake Mix:
265 grams hung yogurt (I have used 800 grams of store - bought yogurt and hung it overnight in a muslin cloth, the next day, after the whey water drained away, I got 265 grams of hung yogurt which I have used in this recipe)
50 grams caster sugar
200 grams fresh cream (single cream)
200 grams condensed milk
zest of 1 orange
1 teaspoon vanilla extract
1 tablespoon + 1teaspoon cornstarch
1 tablespoon + 1 teaspoon lime juice

I tried these mini cupcakes, actually half the recipe for 6. They are yet to complete their 24 hours of refrigeration but I couldn't resist eating one(within 6 hours) with plain Nutella topping. Its really delicious and heavenly rich! Can't wait to taste the final version after it sets completely!
I have a query..if I would like to include small chocolate crumbs(may be processed in mixer to coarse crumbs), could I just add them directly to the same batter or would it be some other process like rolling the crumbs in flour or something? Plz advise.

Hi Sukhjotiaa, Yes you can definitely add the puree without making changes to other quantities. Also just make sure that the purees are unsweetened. You could add about 75 - 100 grams of puree. I will be making more videos with flavoured cheesecakes in upcoming weeks. I'm so glad you enjoyed the recipe and hope you like them, they're super addictive haha! 💗

@@kirtibhalla8787 No it didn't. From what I know few tips are a) Use fresh curd. Even better if you use thick market bought Amul/ mother dairy curd. It doesn't get sour that easy. B) Don't leave the yogurt for too long alas it does get sour. 4-5 hours is enough. You can always put the hung curd in a refrigerator if you want to use it after the time.

Homemade condensed milk can definitely work. If u freeze the hung curd it might loose its creaminess. Just freeze a tiny bit yourself and see the outcome

Hi Mumtha, you could bake it for 30 minutes in a 6-inch loose bottom tin. The way to check if it's done is that the sides will look set but the centre will still be wobbly. I hope this helps! :)

Can we use buffalo milk or cow milk curd and keep it in muslin cloth or a napkin can we use corn flour blue bird not corn starch what is the baking sign for the cheese cake
Oh yes absolutely! You can use home made curd and wrap in muslin cloth. Yes, the corn starch i refer to is the blue bird one itself. Usually, corn flour can also be confused for maize flour (which is yellow and from actual corn / makai) so I prefer saying corn starch to avoid any confusion! And for cheesecakes, the centre looks wobbly and the sides look set. Hope this helps! :)

Hey, yes you can! And no, the bake time will remain the same as they will be individual cupcake sized. By halving the recipe, you'd get about 6 mini cheesecakes.Hope this helps, please let me know if you have any follow-up questions! 🥰

Oh that is so lovely, advance birthday wishes to your mom! 💗 This recipe makes 12 cheesecakes, so you could triple the recipe and you'll get about 36 of them. Hope this helps!

Hi Bhawana, I haven't tried making it into a cake yet, it can definitely be done but the baking time may vary slightly and there may be a need for a water bath too for gently cooking it. I will work on a recipe for the larger cheesecake and update with a video soon! 💗

It will seem set along the sides, but still be slightly jiggly in the centre.
Can we bake in silicon moulds?
Hi Vishakha, yes you absolutely can! You'd have to be a bit careful while taking them out though, let them sit at room temperature for 10-15 minutes, run a knife along the sides and gently lift them out of the moulds. I hope this helps! 💗

Silly question, the yoghurt is hung overnight in the fridge right?
Hey, not silly at all! No, you'd have to tie the store bough yogurt into a muslin or cheesecloth. You then place that onto a sieve. This is then placed over a heavy bottomed saucepan so the liquid whey from the yogurt collects into the saucepan overnight. After about 8 hours or so, all of the water from the yogurt drains away like this and you're left with the thick hung yogurt. Hope this helped! @@CK8smallville Yes that would be completely safe and good! However, once you have the hung yogurt ready the next day, if you're not using it immediately, you would need to keep it refrigerated until needed! You can simply take it out of the cheesecloth /muslin cloth and place in an airtight container in the refrigerator until needed.
