Yeah, even with the most basic understanding of samurai and warriors in general, it feels like it would be FAR more disrespectful to do something like take their arms and leave them alive.
Not only that, but samurai were legally allowed (and frequently willing) to kill peasants for merely disrespecting them (and something as simple as accidentally bumping into the samurai's sheathed sword could count as sufficient disrespect to deserve death). Some would even practice *tsujigiri* - testing out the sharpness of a new sword by cutting down an innocent civilian at a crossroads - with impunity.

Well actually in samurai honor its a huge disrespect to not kill your opponent in a duel, plus, its a death battle, at the end of it all someone is going to be dead
Even if you were right about samurais not fighting unarmed/non-threatening combatants, it's called "DEATH battle"...one of the rules of the show is that the characters WILL fight to the death.
Jack was absolutely at an overwhelming advantage just based on the enemies he's beaten and/or survived against
