Some stats for you… 40% of the food produced in this country is wasted. Of that, 40%, 90% of the waste is because of arbitrary sell by and use by dates that absolutely have nothing to do with the safety of the food. There have been many attempts to do away with these dates but guess who doesn’t want them to go away… food manufacturers. Why because if you throw away perfectly good food and buy it again you are just increasing their profits. Sorry this is a hot button issue for me. Food insecurity and outright hunger is a real problem in this country. It exist for no good reason other than we throw away good food which is a privilege for those of us who can afford to keep buying. The current economics of inflation especially when it comes to food has only made food insecurity and outright hunger worse. Furthermore, there are food pantries that will take expired shelf stable items so before you throw away maybe donate them.
As for salmonella… yes there are bacteria that do not alter the smell/look of food. However, salmonella is most likely a result of not adhering to good food safety practices outside of best by dates. I’m not sure what you ate to get salmonella poisoning and I hate to hear that you had such a bad outcome. In general the foods that are most likely to cause it should be cooked to an internal temp of 145- 165 which will kill the bacteria. Also, making sure perishable items are refrigerated at 40 degrees or below is paramount to food safety. Not leaving things out after cooking for longer than 2 hours or 1 hour if exposed to 90 degree or higher temp. Also, washing fruits and vegetables that may have come in contact.
