5 Ingredient Orange Loaf Cake. Quick food processor recipe. Amazing results every time!

  • The refreshing, zesty flavor of this cake comes from the fresh orange in the recipe. There are only five simple ingredients in this easy food processor recipe that makes it the perfect option for a last minute cake for guests or on a busy weeknight. Don’t be fooled by the simplicity though! This is a moist and delicious cake, bursting with flavor that can be served with your favorite hot drink and a dollop of whipped cream for some extra indulgence.
    INGREDIENTS
    1 seedless orange with skin
    3 eggs
    1/3 cup (80ml)vegetable oil
    1/2 cup (100g) granulated sugar
    2 cups (250g) self raising flour
    DIRECTIONS
    1. Preheat oven to 340F (170C). Grease a loaf tin and line with parchment paper.
    2. Add oil, eggs, sugar and orange into a food processor. Blitz for approximately 30 seconds until ingredients are blended with small pieces of orange rind remaining. Transfer mixture into a large mixing bowl.
    3. Slowly add in the flour and use a spatula to mix until a smooth batter is formed. Take care not to over mix to avoid the cake becoming dense.
    4. Pour batter into the greased loaf tin. Bake in the middle of the oven for 35-40 minutes. Use a cocktail stick to check if cake is cooked inside. If it comes out clean, the cake is ready.
    5. Remove from the oven and leave to cool in the tin for 5 minutes. Transfer onto a cooling rack and remove the parchment paper to allow the cake to breathe. Slice the cake when fully cooled.
    NOTE: This cake can be stored for up to 2 days in an airtight container at room temperature.

    I do love whole orange cakes. The peel and zest add so much to the texture and character of a bake. Your recipe is much easier than the one I used most recently, where I had to stew the oranges for an hour. I must try this variation too. I'll let you know how it turns out.

    Will this work with lemons?

      Yes, I tried this out using a lemon since you asked. It was a pretty good result! I would say you need a large lemon as a smaller lemon will not yield a zesty enough taste. All the seeds need to be removed to avoid a bitter taste. Everything else in the recipe stays the same. Hope this helps:)
