Cranberry Nut Orange Bread

    INGREDIENTS
    - 2 cups flour
    - 1 cup sugar
    - 1 1/2 teaspoon baking powder
    - 1 teaspoon salt
    - 1/2 teaspoon baking soda
    - 2 tablespoons butter (softened)
    - 3/4 cup orange juice
    - 1 egg
    - 1 1/2 cups chopped cranberries
    - 3/4 cup chopped walnuts (optional)
    - 1 tablespoon orange zest
    DIRECTIONS
    Preheat oven to 350 degrees.
    Grease and flour the pans well if using traditional baking pans. I use paper pans to give away the bread as gifts!
    Mix flour, sugar, salt, baking powder, and baking soda. Cut in butter, add orange juice, egg, and zest and mix, just to incorporate.
    Fold in nuts and cranberries. To chop the cranberries, I use a food processor. You can also chop by hand.
    Spoon into pans and bake. If using 3-4 smaller pans, bake for 30-40 minutes. If using one large pan, bake for 45-60 minutes.

    This is the same recipe I had on a book called the cranberry Thanksgiving 35 years ago.i misplaced the book and have been looking for this recipe for years.i am so glad to have found you

    this recipe is great I substituted butter with 4 tbs of olive oil and left out the egg because we had none, turned out fantastic

    I have tried this and my husband loves it!
    I didn't have cranberry in my kitchen so I use apple in stead. It came out also yummy. Love your channel.

    We have a restaurant in Dallas that serves this bread and I have been looking for a recipe to recreate it that was simplified, thank you so much for posting this! Can't wait to give it a try!

    It sounds like a modified version of a recipe that appears in the 12 tradition Fannie Farmer cookbook measurements are the same procedure is slightly different. I don't want to try both ways and compare the two.

    Are these FRESH cranberries or can I use dried cranberries from the Scoop section? I think the latter is sweeter so should I cut down on the sugar if using dried? I also note that you did NOT grease the pans beforehand? Thanks.

      These are fresh cranberries and frozen could also be used. Dried I don't think would work as well as there would be no moisture to help the bread!

      Also I didn't grease because I was using disposable pans to give as gifts, if you're using traditional pans I would grease well!

      Honestly I haven't tried other fruits! I know dried cranberries would work but those could be hard for you to find as well. I think blueberries should work but you may want to change the flavor profile somewhat, maybe by using lemon instead of orange and adding a bit of cinnamon possibly. Sorry I can't be more help!

      Summer Isabelle Lim I have never tried dried cranberries. I would not soften them but would just try them as is, let me know how they turn out!

      +cube52x I haven't tried strawberries, berries would have a lot more liquid than cranberries so it may make the bread soggy.
