Philippines also has Chicharon, it's different from Mexicans chicharon. Our chicharon is just pork skin that is slowly deep fried. We dip it in a spicy vinegar or just regular vinegar. Filipinos love vinegar 🤷‍♀️😂 Also, the rice adobo in jollibee is another concept from the dish chicken/pork adobo because pinoys love to partner any dish with rice 🍚 btw, love this video ❤

Steven, the only way you can have big bites with Filipino food is by using a spoon. we actually use both fork and spoon. the fork is used to shove the food towards the spoon so you can pack in all the things that you want in one bite.

Glad to see you're enjoying Filipino food. It's really a mix between Spanish and other Asian cuisine mixed together. The adobo you had from whatbit looks like is chicken but we also have pork adobo. Lechon kawali usually comes with a dip (liver sauce or onion vinegar). My preference is the vinegar version because it helps with the richness. Can't wait for you to try other dishes like singing (sour soup) which comes with fish/shrimp, pork or even beef. Bulalo is also very good. A side of garlic rice compliments everything. I'm making myself hungry right now 😩 😫 Dinuguan is pork meat seasoned in pork blood. It looks intimidating but it's delicious. Every country has some form of blood dish or soup and this is ours. If anything else, pick highly rated restaurants so you get to experience delicious Filipino food. Again, don't forget the garlic fried rice!

Hi Steven, Chicken adobo is like the unofficial National Dish of the Philippines. Glad you put the adobo sauce on the rice, which is what sauce is for. Try pork adobo next time and dip the lechon kawali in Mang Tomas sauce or a spiced vinegar, which the restaurant should have provided. See my comment on your collab vid with BGA at Casa Filipina for other Filipino dishes you can try. Glad you're enjoying Filipino food.

BTW, Dinuguan is pretty advanced. Some people love it and some don't care for it. I used to eat it as a kid but don't eat it anymore. I may try it again as an adult but I need to know first if the place I'm getting it from makes it right.

I grew up eating Dinaguan because my grandma used to make it. Even though I know what it’s made of, I still eat it when I crave for it. To be honest, I like it the “American” way which is just made of pork meat. The more authentic way has other parts of pork in it. There’s a tiny bit of sour aftertaste because of the vinegar in it.

That adobo is not in water, that's what you call sauce. Filipino's like eating rice so they put the sauce of the Adobo in their rice. So basically, we put a lot of sauce sometimes just because we crave for it

BTW, you're doing the right thing how you eat that adobo. The sauce should be soaked into the rice. You might find that most of our dishes are very flavorful especially the ones with the sauce because we Filipinos like eating rice that much. You know that the filipino dish is that good if you try to taste the sauce first with rice. There's this phrase that we say in Filipino "Sabaw pa lang, ulam na" which means "Just the sauce of it, is sidedish already." 🔥

Yes, honestly lumpia shanghai are never absent in birthday parties. Oh and on the pancit, the fatter ones are egg noodles, and the slim noodles are rice noodles. When separately cooked the one from rice noodles is called pancit bihon and the other pancit canton, sometimes Filipinos mixed them both together just like what you had. On sisig, there are different kinds. Some are crispy with chicharon. Some have mayonnaise making it non-crispy but savory. And always topped with a freshly cracked open egg, mix them up and lastly squeeze a calamansi(Philippine small lime) on top. You can never go wrong with adobo. It's the Philippines' national dish. Also has very many variants. Can be sweet and salty(soy sauce and a little brown sugar), salty and sour(soy sauce and vinegar which is the most common one), and the dry one(cook until the soy sauce dries out). Nope, here in the Philippines Chicharon is just the crispy skin part and Lechon Kawali is the skin with the meat.
Dinuguan, also known as chocolate meat, is a savory dish made with diced pork, pork blood and spices. Sometimes mixed with pork ears too. This classic Filipino pork stew is hearty, boldly flavored, and delicious as a main meal with steamed rice or a midday snack with puto.

Best to have adobo or anything saucy with plain or garlic rice then the fried lumpia or lechon adobo with pansit 😁
The lemony taste is most likely calamansi, the abodo sauce is a mix of soy sauce, white vinegar, tons of garlic, pepper, laurel leaves, and onion..Lechon kawali doesnt usually have any spices on it, save for salt and pepper..

Yes for sure there are sauces you could dip the lechon in, I would recommend the spicy vinegar as well as the brown all purpose sauce. You would definitely like the crispy Pata and I recommend you try that. They have so many delicious pork dishes and soups I would recommend. Definitely try the oxtail kare kare and with the paste you add before you eat it mix it in very good.
Yes you were having chicken adobo I would highly recommend to try the pork adobo as well. Their food is definitely meant to eat with the rice. I’ve been cooking Filipino and chamorro food my whole life and proud of you for trying something new brother!
Oh yeah and the dish you were asking about that looked black. A lot of people will try to tell you not to try it and I would say definitely try it but when you eat it you wanna take a bite and then eat it with rice. It’s black because it’s cooked in its blood which is what gives it that dark color however it’s got a vinegar base to it just like the majority of the Filipino dishes do. Definitely try it it’s honestly not any more wild than Menudo in Mexican culture.

Lechon Kawali is like chicharon with pork belly meat.
Filipinos keep Filipino food a secret. Kidding. Hehehehehe.
Don't be afraid to experiment. Whatever you want - just do it. You can dip the Lechon Kawali in the adobo sauce - mixing the food is not frowned upon.

Yes your chicken adobo looks standard. I like it with white rice so it can absorb all the juices. The lechon should have came with a thick brown sauce called mang tomas or some kind of soy sauce/vinegar mixture

We call it lechon Kawali, boil it first then deep fried after . you should have a dip there either liver sauce or vinegar with garlic and chili. Yes that’s chicken adobo in that white container. Pork sisig best with lemon 🍋 and chilli 🌶
