      I heard that real ramen in Japan takes more than day to make. It's served quickly when ordering because everything is prepared beforehand (mainly broth) which is the most important in ramen. So you can say that this ramen in video is quite quick to prepare.

      probably the stock cloud be changed for a seafood stock and made a little more lighter and the chicken could have been fried off. oh and the broth could have also had some fish sauce or oyster sauce for extra zing and sour. the eggs needed much more time and they are supposed to be cooked all the way.

      Siem Derks ahh fair point but this is cooking, food will sometimes be "wasted". In this case he is getting a different flavour than if he cut it in small pieces. It's up to you if you feel it is being wasted.

    This really plays with my mind lol. It's an Asian inspired soup base prepared in a very unasian way. Ramen is Japanese by name but the flavours used are more south eastern Chinese, and the Chinese call the noodle 'laimen' and not ramen. I think it would be more correct if it's called a Chicken Egg Noodle Soup. (ramen/laimen is an egg noodle).

    2:15 says leave the egg in marinade "for an hour", at 5:12 the egg had been in the marinade "for about 20 minutes". Website with the recipe says to marinade the egg for at least 2 hours and THEN peel the egg. So which is it, I'm confused.

    I'm really confused as to whether this is meant to be Japanese or Chinese or just vaguely 'Asian'.
    Actual Japanese ramen is nothing like this (they'd NEVER use ginger or five spice! Or even carrot or coriander as topping). It's almost always some sort of meat-based (often pork or chicken) stock - yes even shoyu (soy sauce) based soups. The soup nearly always is made to showcase the distinct flavour of the soup base (Kyushu-style pork bone 'tonkotsu' soup, rich Hokkaido miso-based soup, etc), and paired with a specific type of ramen noodle (thinner, 'straighter' noodles in Kyushu and thicker, yellower and 'curlier' noodles in Hokkaido, for instance). Flavours are regional and distinct and delicious. Toppings also depend on the region/flavour but are always chosen to best match the soup/noodles. Common ones include dried seaweed (nori), tender roast pork slices (chashu), bean sprouts, kamaboko (formed fish paste/fish cake), corn, even butter (usually with miso ramen), fermented bamboo shoots (menma), etc.
    If this was meant to be Chinese lamian or something... I don't want to go into details right now but there really is nothing Chinese about this at all. Chinese flavours are again completely different from Japanese ones.
    Dumping a load of 'Asian' ingredients in a pot does not an 'Asian' dish make.
    I'm sure this guy does decent food cause it looks like he did put effort into it, and I'm not bashing him at all, but to call this ramen and 'Asian'-style or even Japanese/Chinese is just a little bit insulting.
    It's kind of like if I threw frog legs, pasta, hamburger meat and gravy into a pot, boiled it up and settled a battered fish fillet over the top and served it with a side of chips and called it 'European food'.
    Asia is the largest continent in the world and to see some of the most diverse, interesting and unique traditions and flavours get lumped into one big stereotype of 'Asian' really disheartens me.
    If one day different, varied Asian cuisines are represented with respect and researched/understood by general Western society I'd shut up, but it (unfortunately) seems like that won't be for a long while, as people can't seem to be able to even separate Japanese/Chinese/Korean - can't really expect them to be able to handle Vietnamese, Thai, Cambodian, Malaysian, Indonesian or Singaporean cuisines properly, can you? I'm not a 'food purist' at all and I think experimentation is great, but... this just comes off as a giant edible stereotype.
    Sorry if this just became a stupid, long rant on culture/food, but it's something I'm very passionate about that I feel is often misrepresented and exoticised.

    8-9 quid?! Ideally ramen should cost so little. There's barely any meat. It's mostly stock, cheap noodles, cheap veg, a bit of meat. In Japan, you get it for $4-6. Granted in New York, a real nice ramen goes from $11-15.

      Uhmmm... this sauce is a product of fermentation... so the taste/smell is rather... special
      It is usually only used in combination with other ingredients. The sauce is developing amazing and surprising tastes when being combined though.
      I used it for a BBQ sauce for spare ribs a while ago, hence the experience with it ;)

      Actually ラーメン is spelled out in Katakana because it doesn't originate from Japan, and I do in fact believe it is originally made as a Chinese dish, HOWEVER this monstrousity of a "dish" he just made should not be compared to any of those, Japanese or Chinese styled raamen...

      Evie Addy What I'm saying is that the style of the dish comes from the Chinese dish "Lamien", hence why ラーメン is spelled in Katakana and not Hiragana/Kanji.

      guetiggrinsen London prices are expensive... £8 is definitely on the cheaper end for a bowl of Ramen this size... Certainly at food chains like Wagamama, etc... I imagine the prices in Camden Market to not be any less expensive than that! That's London for you!

    I feel like the "how much would you pay" thing is weird, unnecessary and uncomfortable. A foods price is NOT INDICATIVE of its quality. The price of a meal is a complex equation that takes into consideration seasonal/regional factors as well as rent/overheads, whether the country your in tips or a has a living wage, as well as many other factors. Just ask people if they like it, thats all that matters anyway.

    This is fucking ridiculous. Growing up in Asia, we make this type of noodle soup everywhere every single day. It's only about 2pounds for a dish that probably tastes 10x better. And these guys are willing to go up to 10pounds. Like c'mon noodles and soup ingredients aren't that expensive.

      Eating out is always much more expensive than preparing the meal yourself. You make tagliatelle with tomato sauce and it will cost you 2€, but in a restaurant you will pay 10€ for the same dish. No exception here.

So even when we don't make our own food and go to restaurants the dishes are still no where near as expensive as this. Either way I'm not even judging the dish, it's the people who are stupid enough to waste that much money on a very good noodle soup but it's really not worth that much.

Also I'm not talking about the actual value of the soup, I'm criticizing how much random people are willing to just throw away for a dish like this. Don't get me wrong it looks very good, and yes it's made by a professional chef, but that doesn't mean it's worth up to fucking 10pounds when cheaper ones in Asia probably taste a lot better. That's what I'm criticizing, not the mentality or the dish itself but how much people are willing to splash out on it.

    i have like the cheapest way to make it. i make some pot noodles, steal one of my mams eggs from brekky or lunch, tanke some chicken from the fridge, like from a pack, if you dont have that, make some chicken nuggets from aldi, they are dirt cheap, add some siracha
    to the chicken, not the noodles, put all todether, and you win noodles
