A day spent on making OYSTER SAUCE

  • Sauces such as oyster sauce are usually just store bought from the local Oriental grocery. If you take a close look at the ingredients often you will find very little or no oysters in the making of the sauce!
    Today, I drove allllllll the way to the Sydney Fish Markets to buy Oysters and go allllllll the way home just to make my own Oyster sauce. Hope you enjoy my vlog + tutorial ft my baby (the car)!!!
    Ingredients to make Oyster sauce:
    6 x Sydney rock oysters
    4 x Dried oysters
    5 x Dried shitake mushroom
    1TBS x Dark soy sauce (Lee Kum Kee)
    4TBS x Premium Light soy sauce (Lee Kum Kee)
    1/2TBS x MSG
    1TBS x Sugar
    2 slices x Fresh ginger
    1 tsp x Oil
    2.5 cup x Water
    1-2TBS x Potato starch to thicken
    Instructions to make Oyster sauce:
    1. Finely chop the Sydney rock oysters
    2. Cook oysters low for 10mins with 1/2 cup of water
    3. Drain the mixture through a fine sieve into the saucepan. Discard the pieces in the sieve.
    4. Add the reserved oyster liquid into a new saucepan with the remaining ingredients except for the potato starch and bring to a boil. (adding oil will give the sauce a glossier and more appealing look)
    5. Reduce heat, gently simmering for 10-15 minutes.
    6. slowly add and stir the slurry made using potato start until completely dissolved.
    7. Remove the saucepan from the heat, let cool completely.
    8. Allow to cool to room temperature and pour into a new bottle.
    9. Use immediately or store in refrigerator until ready to use.

      Like tomato sauce, normally we wouldn’t make it but it’s useful to understand how to make a key ingredient in a lot of Chinese cooking

    Thanks man. I gotta try this. And good that you're in Sydney too! The store bought stuff has this more "transparent" appearance compared to yours. Could there be a different type of thickening agent that can be used to achieve this effect?

    This is sorta like those specialist sauces because of the particular ingredient (Sydney Rock Oysters. Like Taiwanese Black Bean Soy Sauce has a special type of Black Bean. The only way to know how good is to have it yourself

    Any chance of a video of your semi outdoor kitchen? Curious about how much (or little) ventilation you're able to safely get away with. I have two of those burners on an outdoor setting but wondering how much of an enclosed environment I can operate them in.

      hi friend. i think potato starch is normally used to make sauce shinier and stringier than corn starch. that's why people use potato starch to make sauces such as gravy, pie mix.
