    im here because i saw you TED talk, really inspiring for me, because my grandpa was chinese i came to Chile, and im here now, enjoying my ascendancy as i can, learning a little bit the cooking tricks, learning about china and a little bit of mandarin!... chinese food for me is nostalgia too, thank you for the content! get better always and enjoy

    I grew up in Shandong but I never eat the chicken cook in this way in the restaurant in Shandong. It takes me several minutes to realize it is Dezhou braised chicken (Since Dezhou is a city in Shandong province, I think it acceptable to call it Shandong chicken). However in Shandong almost all the Dezhou braised chicken were produced in the factory and sold in the store. In the restaurant if you order Dezhou braised chicken, the chief serves you the cooked chicken bought from the store. So it's very interesting that you can't find a freshly cooked Shandong chicken in the restaurant in Shandong.

      1. In China almost all the famous braised whole chicken like Dezhou braised chicken, Daokou braised chicken, Fuliji braised chicken, started to become popular with the development of the railway transportation of China. At that time it was so enjoyable for the passengers to eat a braised chicken for a meal. Of course people don't expect to eat the "freshly cooked" braised chicken in trains.
      2. "Dezhou Braised Chicken" was registered as a trade mark of a single company Dezhou braised chicken Co., Ltd. So only this company can produce "Dezhou braised chicken". If a restaurant even in Dezhou sells a self-cooked Dezhou braised chicken, it is illegal. It is a bit ridiculous. Now the new laws in China don't allow company to register a trade mark with a name of a city like "Dezhou". But this trade mark was registered earlier before the new law, so the new law doesn't apply.
      3. The last reason should be convinience and lower cost. I've been to Venice and found almost all the Italian pasta in the restaurants there were re-warmed from frozen. I think the logic is similar.

      @CULI-FABRIZIO In the restaurant there are a lot of cuisines of braised chicken. Most of the braised chicken cuisines are freshly cooked. Only few kinds of braised chicken like Dezhou braised chicken or Daokou braised chicken were bought from the factories.

      @CULI-FABRIZIO In Rome and Firenze I found most of the pasta are freshly cooked. Only in Venice the pasta is pre-cooked. I think the freshly cooked braised chicken is far more delicious. But in a train or in a crowded island of tourism you don't expect that much.

      Shandong chicken is "freshly" cooked outside of Mainland China mostly because these are likely old recipes brought by immigrants from decades ago or even towards the early 20th century. Might just be that while these food cultures evolved in China, these traditions remained in other countries from older generation Chinese immigrants.

    Gelatin solution can be used to “clean” used oil due to its physical properties. The ratio is 1 quantity of oil for 1/4 of water and 1/16 of gelatin powder in cc. As gelatin and water are both denser than oil, their solution will sink to the bottom when mixed in oil. In the process of sinking, large particles such as impurities will be dragged down with it. The next day after you take the gelatin-oil mixture out of the fridge, you can simply scoop out and filter the oil from the top and scrape off the solidified gelatin jelly from the bottom thereby achieving the cleaning effect. You can also just stir it over and over and do the scoop on the spot once the gelatin jelly clumps up and traps in a good amount of impurities.

    Msg is found in all vegerables, though small amount, and is a derivative of salt, NaCl (sodium chloride), if you're allergic to msg then you're allergic to all vegetables and salt base flavorings

    Editing to say: went to the restaurant in the last week of July 2022. NOTHING made in these videos was ever on the menu. Staff there told us he doesn't even own it any more.

    I filter my oil after use while still moderately hot with coffee filter papers. I freeze my master stock in 4lt icecream tubs and it will keep for 5-6 months, if unused. If you keep it in the fridge treat it as a protein so 3 day shelf life once defrosted. Plenty of different recipes out on the web and on youtube, the more you use it the better it gets, but is does require care and attention, again reffer to the internet for proper guidance.

    Man, why is your wok seems like the season is indestructible? When I put vinegar in mine and cook for a min, after I wash it the seasoning is chipping. Should I re season and start over? Awesome video btw! Best regards man..
