Dual wok style cooking technique

  • I was trained by my father Danny Lim at a very young age in Chinese cuisine. I have over 13 years of experience in cooking Western and Chinese cuisine at a commercial level.
The technique of cooking with dual wok is becoming a rarity as it takes many years of training and understanding. The reason I posted this with no editing is to see if there are still chefs around the world able to do this and to share my knowledge in dual wok cooking.
If you want to find me, I am probably on one of these platforms showcasing my “kungfu” like Bruce Lee to the Western world!

Fun fact: If you look at the way I am holding the ladle, you will notice I hold it on the metal instead of the handle! I learnt to cook when I was 13 when the ladle was too heavy for me and now its just become a habit!

The crazy part is, I’ve been doing this for so long that the only thing slowing me down is the fire not being powerful enough.

Fyi, the differences asian cuisine(specially china, japan, and ASEAN country) and european cuisine, when you cook the dishes just need one time prepare.

Love how the big ladle is used for everything. Actually, I love the whole setup. There's the constantly replenished water and built-in drainage for immediate cleaning. Then on the side you have all other things ready to scoop: oil, chicken stock, starch slurry, and minced garlic. Oh, and the very handy strainer+pot for all the food you just deep fried. So nice.

I remember my relatives asking me how tough is it to work long hours in a kitchen and I just tell them that time moves real fast during peak hours. Any cook and chef will know how you just zone out everything and focus on what's happening in the kitchen. I miss working in the kitchen. It's been months whew and I miss the adrenaline.

So cool, can’t stop watching. The wok was one of the first thing I learn to use in the kitchen. Cooking with my mom was one of the best memories I have. She would prep all the ingredients and wait for me to come home. And I would show up late because I was an asshole teenager. I could tell she lost some of her motivation so I heat up the wok and get going. We made some of the best food together.

In Western cooking, we do the same, just with different equipment for different types of cooking, for example, pasta stations, Grill stations, and many more. U have to multi-task and the timing has to be on point or else your food will be overcooked or burnt on the other. It is a skill to master and communication as well because communication helps with the timing of cooking

Much like you, I was taught by my father to cook the family's chinese restaraunt, cooking all the classics. I started off by doing all the deep fry, then moving towards fried rice and egg/omelette then finally the main courses. By the time I was finishing high school I was doing dual wok, not at a top tier level, but I was managing to sustain it through out a service. Not too bad for a kid forced into the family business hahaha
