In this video, you will learn how to make a vegan oyster sauce - a staple in Thai cuisine. For this version of an "oyster" sauce, you will use dried shiitake mushrooms as a base, as well as water, cane sugar, soy sauce and corn starch.

Ingredients:
4-5 dried shiitake mushrooms
150 ml water
1 tbsp brown sugar
30 ml soy sauce
1 tbsp corn starch
Instructions:
1. Soak the mushrooms in water for
2. Add the soaked mushrooms with 150 ml water to a pot.
3. Bring the water to a boil and reduce to a simmer. Simmer for 1-2 hours.
4. Strain the liquid into a sauce pan and add the sugar and the soy sauce. Stir to dissolve.
5. Prepare a corn starch slurry by combining 1 tbsp cold water with 1 tbsp starch and add the slurry to the pot as well.
6. Bring to a boil while constantly stirring. After 1-2 minutes, remove the pot from the heat and fill the sauce into a food container or a bowl.
7. Do not place a lid on top until the sauce has cooled down in order to prevent any condensation.
The mixture shouldn't be called oyster sauce instead a MUSHROOM SAUCE

As I know corn starch can be substituted with arrowroot powder. I also wonder if adding Nori seaweed or konbu kelp will give it a fishy flavor.

So thats like 5 hours of work just for that tiny amount of liquid? you gotta scale up this recipe.
You can easily double or triple the ingredients and batch it :)

Will pressure cooking the mushrooms reduce the boiling time from 2 hours to 10-20 mins?
How long can you save the sauce before it goes bad? Anyway to freeze the rest and save for later?
Wow, if you wanna go extra healthy, you can even substitute the soy sauce for coconut liquid aminos.
could you substitute sugar with erythritol?

I tried it with powdered shitake, but I did not get the same results.
It was much more lumpy and I was not able to filter it well enough so it becomes clear and it didnt taste as good.
That doesn't mean that it doesn't work, just that I didnt get it to work yet :)

Thanks for watching. Yes, but then you'd need to filter it really well with a fine mesh strainer lined with kitchen paper. Otherwise there might be lumps.

You could make a mushroom sauce with them and it's likely to be delicious, but it would taste different than oyster sauce.

Sorry for the late reply. Ideally, you would use dried mushrooms, as they are more intense in flavor but you could also use fresh ones instead.

what about mushrooms,where are they in the sauce?
Thanks for watching. The mushrooms are used in the beginning to make a sort of stock, and then strained out. You can find it in the recipe.
What do you do with the mushroom after you strain it?
Thanks for watching. You could eat them, but similar to stock, you'd usually discard them because they lose a lot of flavor
