Yep, I have fond memories of my Vietnamese friend boiling it slightly, pulling it out and cutting with scissors and mixing with oyster sauce. Then she'd make a soup out of the boiling water. She'd add these to two or three more dishes to make a 5 course meal for her family of 7! At 15, it was her job every afternoon. We'd usually get started after our spicy noodle contest and kicking back after school. Awww, fond memories every time I eat Gai Lan.
She was the youngest with 4 brothers! They all worked and shared their earnings with her so it was completely fair. Sunday spring roll dinner was my favorite so I'd always let her know I'd come over and help her roll.

The garlic brown sauce is usually stir-fried together with the food in the wok. We'll do a recipe a simple vegetable stir-fry with garlic sauce soon. You can use this sauce in your stir-frys as well.
To be honest to me the sauce doesnt look like it tastes really good. but because every single one of your recipes tasted absolutely delicious when i made them i will give it a try. only difference is i never saw gai lan in a german asian shop so i use bok choy

I'm not sure where you live, but if you live in Berlin they sell Gai Lan at Go Asia Asien Supermarkt at Kantstr. 101 Berlin - Charlottenburg and at Vinh-Loi Asien Supermarkt at Müllerstr. 40 in Berlin - Wedding. I got vegan oyster sauce at Vinh-Loi twice. One was not so good though (it tasted like pure chemical or concentrated Maggi) and I threw it out. I haven't opened the other yet because I'm scared; but, it is made from mushrooms :) I wish I found this recipe earlier! So many Asian recipes call for fisch sauce and dried shitake really does add that extra layer of flavour; I make a lot of broths with it. :)

Hmmm, the mushroom plays a pretty big role in flavour for this sauce. Not sure if there's any vegetable that would give you the same earthy flavour. You can maybe try using roasted eggplant and the darkest soy sauce you can find so the umami flavours come through. Give it a try, let us know how it goes 😊

Yes, fresh shitaki would also work. We've also made this sauce using portabello, they also taste great for this sauce.
