My Moms Iced Sticky Buns:
INGREDIENTS:
Dough-
10c. Bread Flour
4c. Warm Water
2TBL Yeast
1c. Instant Mashed Potatoes
4 Room Temperature Eggs
1c. Soft Salted Butter
1c. Sugar
1.25 TBL Salt
Sticky Bottom (for two 13x18 Pans)-
1 stick of butter (per pan)
2TBL Vanilla (per pan)
3T Water (per pan)
1.5 c. Brown Sugar (per pan)
Frosting-
6c. Powdered Sugar
1c. Butter
1/4c. Water
INSTRUCTIONS:
1. Preheat your oven to 350°F (You will want you oven on the whole time to create some warmth to the top of the stove for your dough to rise). Poor 4 cups a very warm water into a mixing bowl then sprinkle both yeast and 1 tablespoon of your sugar into the water. Let's sit for one minute or until yeast starts to bubble and activate.
2. Add butter to the mixing bowl. In a separate small bowl whisk four room temperature eggs and add to the butter and yeast mixture. Turn on mixer at low speeds.
3. While mixing add salt, dried potatoes, sugar and flour. Combine ingredients until dough begins to pull away from the sides of the bowl.
4. Cover and let sit on stove top (while oven is heating) for roughly 20 mins. While the dough rises prepare pans. Melt butter onto the sheet, sprinkle with brown sugar across the pan, mix water and vanilla then drizzle over brown sugar and combine everything to make a paste across the pan.
5. Next prepare the icing by combining all of the ingredients until it's smooth and creamy.
6. When the dough has begun to rise, divide into two parts. Create a long rectangle, using your fingers smear butter over the top of the stretched out dough. Liberally sprinkle on cinnamon and brown sugar. Using a pizza cutter or a knife slice into 15 slices. Take each slice and create your roll, then place the rolls on to the pan with the sticky bottom inside. Put your pan of rolls on the stove top and allow to rise again for about 20 minutes.
7. Place in the oven and bake for 20 minutes. When the roles are finished baking allowed to sit for 20 minutes then ice and enjoy!

I always add grated zucchini any time I use ground beef. It is great on lasagna and hard shell tacos. Since it is grated it cooks really fast,I add it once the meat is cooked and drained (if needed).
My moms lasagna is done in a massive roaster pan with at least 5 layers. each layer has a meat, Italian sausage, meatball, pepperoni, Mortadella or pancetta. I like to make a white lasagna with mushrooms and spinach.

I add some sour cream (crème fraiche or Schmand in German) on top of the lasagne before adding (a lot of) cheese - absolutely love the way this changes the taste 😍
I make my lasagne in a crock pot. It's done (with uncooked noodles) in 4 hours. Also, to the ricotta, I add an egg, chopped or dried basil, a package of thawed frozen spinach and lots of nutmeg. It's a great way to sneak veggies into the kiddos.
I put grated carrot & Zucchini in my lasagna red sauce and very finely chopped mushrooms and cook the sauce low and slow for most of the day :) my kids love it.
But we love it cheesy too and have béchamel white sauce. These freeze beautifully too

Love pumpkin, and am looking forward to canning come this fall. I just made a veggie lasagna last week with pumpkin marinara (Aldi, from fall Finds), and it was the best lasagna I've ever made!!!
Canning pumpkin: you can also can them in chunks in water or syrups that isn't "rebel" canning. The reason canning pureed pumpkin isn't recommended by the USDA, etc is because the current home pressure canners cannot produce the amount of pressure needed for a guaranteed seal with the lid. I do a little rebel canning, but really only one thing because I'm still relatively new to canning. I've been water bathing for a couple of years but pressure canning is newer to me. My rebel canning admission is that I reuse lids. I do check to make sure they aren't bent up or the rubber seal isn't scratched or broken first but I do reuse lids. I RARELY have seals not seal properly. I think I've had maybe 3-4 in the past year or so and I've been canning a TON this year. So I am doing okay, I think.
For my lasagna I brown up half and half ground beef and italian sausage :)

I add pepperoni to our lasagna. Along with mushrooms and onions fry finely chopped pepperoni in a pan then add sauce to the pan to warm. Then layer into your lasagna.
Or, top your lasagna with pepperoni slices before baking.
Both ways a tasty.
