Just got back to Calgary Alberta Canada after spending 5 days in San Diego with my wife and visiting all of Sam’s restaurants every night for dinner. I was lucky enough to be apart of the 4 year celebration of graze and meeting Sam himself it’s a memory I’ll never forget. First thing I do once I got back was put on Sam’s newest episode ❤

Wow, what an awesome cultural fusion on that pizza idea, Korean/American. Kimchi, gouda, fried chicken, Pizza! I love gouda, and kimchi on my eggs, My daughter (9yr)loves pizza and I have been teaching her kitchen skill and using a knife. It would be pretty badass to have one of her own and grow love for cooking like me!
Not sure if that was the problem but it might helps in the future: Whenever I can't stretch a Pizza dough by hand it was because it wasn't warm enough. It really helps way more than people think to let it rest for 30-60 Minutes at room temp makes it way easier to handle. Also yeah rollin pin isn't optimal but heck it's better than not having Pizza or having plenty of holes in the dough
We went Sisters Pizza while in San Diego last summer because of your video from there! It was AMAZING … Emily was ADORBS!!! We follow them on social media and I jump in on some San Diego Foodie pages and always mention them when peeps ask about best pizza in SD, like the local I wanna be one day! 😜😜😜
March recipe: Italian Wedding soup. I start with a basic chicken broth, and then I add celery and carrots. My grandmother would pick a fresh green from her garden such as Swiss chard, curly endive, etc. (I prefer spinach). You can cook your chicken in broth or use rotisserie. Grandma made meatballs with hamburger, breadcrumb, cheese, salt and pepper. she rolled into small size but not tiny. She would drop them into sauce without precooking. She dropped eggs into soup near the end. She never put pasta in her version, but every time I order in restaurant there is pasta included.
March: Cali Cheesesteak Sandwich Thin sliced ribeye (I use the pre sliced from Trader Joe’s when feeling lazy) Season: spg, smoked paprika, chipotle powder Caramelize onions and green bell peppers, thinly sliced Ciabatta or sourdough roll, toasted kewpie/ Franks Red Hot mayo Topped with provolone or habanero jack cheese Long time subscriber!
i so understand when Sam is describing how trying to get the pizza dough round gives him anxiety. You know that it doesn't have to be perfectly round, but there's something deep inside of you that wants it to be.
March: CHICKEN AND SHRIMP FAJITA PASTA!!!!!!!!!!!!!!! Super easy and quick! Marinate the chicken and shrimp in STCG carne asada recipe. After that has marinated, sauté your peppers and onions. ( I use red and green bell peppers and a yellow onion) after you sauté the vegetables. Set them aside. Add your chicken to the skillet and once that’s 3/4 cooked, add the shrimp because shrimp doesn’t take long to cook. Once the meats are cooked, add the vegetables back, and then add STCG alfredo sauce recipe AND STCG usual Mexican spices. (Smoked paprika, salt, pepper, garlic powder, chipotle chili powder, oregano, cumin) once the seasonings have been added. Let simmer on low heat to thicken up the alfredo sauce. And then add any type of cook pasta you like. I typically use penne with this recipe. But you can use any type of pasta.

March: Carne Guisada Ingredients * 3 lbs stew meat * 1 tablespoon or a little more oil (lard, bacon grease, etc) * 1 medium onion, diced * 1 green bell pepper, diced * 3 tablespoons tomato sauce * 2 teaspoon garlic powder or 4 cloves of garlic, minced * 4 teaspoon ground cumin * 2 teaspoons salt * ½ teaspoon black pepper * 2-3 tablespoons all-purpose flour (to thicken) * 1 cup chicken stock * Flour tortillas, rice or mashed potatoes, for serving Instructions * In a large pan, brown the stew meat in oil of choice * Sauté onions and green pepper over high heat and add meat to pan once finished * Add the tomato sauce, garlic powder (or fresh garlic), cumin, salt and pepper and stir well. * Sprinkle the flour over the meat and mix well. Add the stock and mix well so there are no lumps. * Bring to a boil, cover pan and reduce heat to low. Cook for 1 ½ hours, or until meat is tender. * Serve with rice, tortillas or mashed potatoes.

Pro tip for stretching pizza dough: roll/stretch out the dough, and once it starts to rubberband back, just let it sit for a few min. Cover in a damp towel (optional, really). Once you start rolling it out again, it'll be MUCH more receptive to expansion.

The key is leave the dough out for 15-20 minutes and I always use a rolling pin. Looks great nice job
