You can use 11 speed MTB cassettes on Road HG freehubs. Just need the 1,85mm spacer ring behind the cassette. That way you can use a wide range 11-51 11 speed shimano cassette or sunrace for example with a GRX 1x11 speed drivetrain (with bigger cage then).

7 speed chains are usually consider 6, 7, 8 speed chains. 9 speed, as previously explained, are narrower and will likely not shift well on other cassettes.

Short answer: no. The long answer is that the shifter needs to match the pull ratio of the rear derailleur, and needs to have the same number of speeds as the cassette. In other words, you could use an ADVENT shifter with an ADVENT 11-46 9-speed cassette and an ADVENT X 10-speed rear derailleur.

Forgot to mention that 12 speed Shimano cassettes use microspline freehubs and 12 speed SRAM use SRAM XD freehubs.

Sram, suntour, sunrace etc also sell 12sp cassettes that work with a hg freehub though

11 speed cog spacing is narrower so it still fits in the same space. Don't worry about scratching your frame!
