I don't know why people are so "upset" that you've gone plant based. Maybe people are upset because she didn't build her fan base for her audience cooking vegan food. Now it's not the same show and she doesn't seem like the same person. Yes people change. But she didn't gain her viewership cooking plant-based food. Nor with the same set up. It was a family show. Now it's catering to mean-spirited vegans.

As much as I love ramen especially with chicken in it and the flavor of the broth from the meat and bones, I'm so happy that you made a vegan version of ramen because I am trying to add more vegan recipes to add to my diet. I can simply just use this recipe and just add chicken to it if I want instead of mushrooms. What people fail to understand is that you don't necessarily have to follow recipes exactly you can also add whatever is to your liking whether it's vegan or not, this is still a great healthy option and a less time consuming recipe. I can't wait to try this!!! I just love food! Food is life! ❤️ 🍜
Made this tonight and it was AMAZING!! Everyone was amazed, including the vegetarians and omnivoires who have high standards / picky palates :) Here are the changes I made (because I didn't have time to go to the grocery store): stock changes: - used carrots instead of daikon - used 1.5 medium yellow onions instead of leeks - frozen minced garlic instead of whole - added a 2 TBS of vegetable boullion paste - added 1 TBS asian mushroom powder - omitted MSG (I just realized I forgot about it oops) tare changes: - I fried minced garlic in 2 TBS oil (I was making this for a toddler who doesn't eat spicy) and used that instead of chili oil toppings: - instead of king oyster mushroom I sauteed some Beyond vegan ground "beef" with some salt and pepper - I added boiled and thinly sliced wood ear mushrooms Will definitely be making this again!! I'd say the broth itself doesn't taste like yummy ramen broth until you add the tare, so definitely don't adjust anything until you try mixing it with the tare (I thought I had done something wrong, but after mixing the broth with the tare it was DELICIOUS!). Thank you soooo so much for this amazing recipe Seonkyoung!!

Thank you! I love your recipe. Since I have to eat halal foods. Non plant-based ramen recipe most of them contain pork or lard, so I had to substitute. Now I can make them withouth changing the recipe and just avoid alcohol 🥰 love your recipes!

I am so excited to try out a recipe without substitutions! I also love that Seonkyoung has decided to keep her existing videos. Some of my favorites are her Vietnamese Lemongrass Chicken (sub'd tofu and yondu), Spicy Mongolian Ground Beef (have tried w/tofu and Impossible Meat, both are great), Japchae (The BEST Japchae video - threw in extra mushrooms), Dan Dan Mian (sub'd Impossible Meat), and Tteokbokki (no subs, just more veggies). Outstanding vegan ramen recipe. I added a few more vegetables such as broccolini, sliced carrots, and brussel sprouts. The broth was spot on, and exceeded what I have eaten at the local ramen restaurant in my city.

Just wanna say that I've tried the recipe and it was awesome!! I didn't have yondu so I just left it out of the recipe completely but it still worked. I didn't have time to make the special sauce so just salt and sesame oil for the oyster mushrooms did the trick. Overall, I'm super stoked that I get to eat ramen again..!!
This looks so good! Thank you for sharing this. I love ramen but after I hit 25, my stomach can no longer handle the fat/oil without giving me a massive stomach ache and making me running for the bathroom. My mom also doesn't eat meat broth ramen and all of the ramen places in our area stopped making the veggie ramen and just use tonkotsu broth which is so fatty, so she was so sad. I need to look for that Yondu the next time I go to the Korean grocery store so I can make this for her :D

I usually make chicken broth in my instant pot. When the pandemic started I panicked and bought lots of ingredients from an Asian store because all restaurants closed. I have that sea kelp and big bag of dried mushrooms. I’m going to make that.

I usually make chicken broth in my instant pot. When the pandemic started I panicked and bought lots of ingredients from an Asian store because all restaurants closed. I have that sea kelp and big bag of dried mushrooms. I’m going to make that.

I’ve made a vegan ramen once, and it had a splash of soy milk to make it a “milk broth”
