A while ago, Andy did a ramen cooking class with this miso ramen recipe. By looking at the whole cooking process, I still didn't attempt to make it by myself because it takes so long simmering the broth using a regular pot. As a busy mom, I love to use my favorite Instant Pot to cook EVERYTHING.
So I converted Andy's recipe into an Instant Pot version, from typical 6 hours to 1.5 hours. The final result is so close and almost identical. I have to admit, my version is better because it's faster and I use two types of miso instead of one. The broth is hearty and ridiculously rich, full of umami flavor. For making the video, I've eaten it a few times in a roll and still didn't get tired of it. It tastes SO GOOD!

Ingredients
stewing chicken
1/2 inch ginger sliced
1 leek
1 large sweet onion quartered
1 head garlic crushed
8 dried shiitake mushroom or fresh shiitake mushroom
1/2 cup bonito flakes
1 sheet kombu
1 tbsp sesame paste or crushed sesame seeds OPTIONAL
1/2 cup white miso
1/4 cup red miso (adjust the amount to your taste)
3 quarts water
salt or shoyu to taste
Feel free to add tobanjan (chili paste) for a spicy flavor

Sure! I couldn't make it to a real Asian grocery store but I was near a gourmet grocery and had to make do with what they had. They didn't have any red miso so I just used the full amount of white miso, and they didn't have real ramen noodles so I used udon. I sort of made up my own recipe for char siu because I couldn't find any red bean curd or char siu sauce, so I used a premade Chinese pork marinade and added honey and garlic and soy sauce to it. But the overall flavor was very good and I especially loved the soft boiled and marinated eggs, they are my favorite part of the ramen at our local shop and I'm super excited to know I can make them at home now! I should also mention that I did it all in one day...I started the pork and eggs marinating at 10:30 in the morning and made the soup for dinner. It was still very good even though I know the pork would have been better if marinated longer.

I made this and just finished eating it. It was really good.The whole family LOVED IT! I used a pork tenderloin topping that I prepared in the instant pot sous vide on the warm setting for 3 hours. I've never had ramen like this before. I don't live in an area with good ramen places. I was always intimidated by all the steps and time it took to make the broth. THANK YOU for converting this to an instant pot recipe! I'm going to try your shoyu recipe next weekend. I can't tell you how grateful I am for this recipe.

Loved your recipe. What do you do with the stewing chicken after making broth? Can you add it to miso soup or do you use it in other recipes?
Thank you! No, we strained the broth and tossed the stewing chicken and everything else since there is not much flavor left. Since a stewing chicken is $2.50-$4 at the local Asian market, we haven't considered re-using it.
I deboned it and froze portions to give to my dogs! I bet there's plenty of flavor for them.

maybe stupid question, but what do you do with the leftover chicken and vegitables from the broth? do you just throw it or what is going on here?
Don't suppose I could get your husband's resepie as well. I've played around with making ramen, with mixed results so far, and want to learn as much as I can about both methods, the more traditional way and using a pressure cooker.

Do you mix the chicken broth and the miso soup altogether?
Can we can put in the kelp together with the rest of the ingredient before cooking ? Or it has to be done after cooking of the soup?
The kelp will become slimy if left in there too long.
Would love to see a recipe for actual noodles. Real ramen noodles are not easy to find everywhere :)
YES, agreed! So far we like Sun noodle as most ramen restaurants use it in the States. But we are currently developing our noodle recipe and share with everyone!
If I want to skip the chicken, how long should I set the Instant pot to?
If storing extra broth, will it keep with the misos mixed in? or should I store sans miso and heat and mix in as needed?
If you are planning to consume it within a few days, you can do it either way. But if you're going to freeze it, do it without miso. Hope that helps!

You can use pork or a mix of pork and chicken. The flavors will vary, but will still be delicious!

So I am following your recipe and I started soaking my kelp tonight so tomorrow after I do my bones and put it all together into the instant pot I just put the water in there not the kelp is that what you’re saying so I just want to water that I soaked it in right that’s a lot of water I have a 6 quart instant pot how much of the water do I want to use thank you for your help
I have a 6 quart IP too. If you already soaked the kelp overnight, use it instead of water. Just make sure it's about 3 quarts of the liquid. Let us know how it turns out. Good luck! We're happy to answer your questions.
Ice or Rice it’s about 5 cups of water so I don’t know if it’s going to be quite that amount but I can add some more water real fast to the kelp because I used a big sheet of it and then I covered it I have it in a bowl that has its own cover and it’s on the counter so I use all that water instead of using regular water? So it’s better to use all the water that the kelp is soaking in then to use regular water that gives the soup more flavor the broth?

It's not literally instant. Instant Pot is a brand of an electric pressure cooker.
