I don't use it much yet.. I have some white miso in the fridge tightly sealed, but it may have already gone bad..? It's been a month! 😅
Miso is fermented so it never goes bad as long as you use clean spatula when you take it out from the package 😉. The easiest way to use miso is dipping sauce for vegetable sticks. 2 mayo (Japanese mayo if available) and 1 miso !

Yes, you can mix several miso to your taste.
I make miso by myself at home. Aka miso. From Kojikin to rice koji, to soy or chickpeas miso. No paragon with storebought.

I have always avoided the dark miso too because it has been described as having a stronger taste. But I love salt and my light miso always tastes bad.
