    Sooooo good to know. It literally took me decades to find a miso that I REALLY liked. It's Marukome's Organic Miso, reduced sodium.....LOVE IT and making it as I type. Thank you.

    I recently made a miso soup with awesome ingredients but the miso was so sweet it was like slurping a sugary soup. I tossed it. This helps a lot. Guess i will buy darker ones. Also i found one labeled with „savoury“

    Just to know I can use any other miso to cook/marinate meat/fish, whatever I have at home is relieving 😁 as I am currently in the making misoyaki salmon with red miso marinade 😅🤭

    Thanks. I tried a flaky type in Japan and didn't like it as much as the smooth ones. Hopefully I can find the dark one somewhere in Australia.

    Do you think it is great idea to mix miso pastes when you make Miso Soup?

      I know and I intentionally use the word 🤣.
      Yes, you can mix several miso to your taste.

    May I ask.. How do you store miso and for how long after you opened it?
    I don't use it much yet.. I have some white miso in the fridge tightly sealed, but it may have already gone bad..? It's been a month! 😅

      Miso is fermented so it never goes bad as long as you use clean spatula when you take it out from the package 😉.
      The easiest way to use miso is dipping sauce for vegetable sticks. 2 mayo (Japanese mayo if available) and 1 miso !

      I have always avoided the dark miso too because it has been described as having a stronger taste. But I love salt and my light miso always tastes bad.

    In Canada, the miso has either alchohol or msg. Are all miso's fermented?

      Yes, miso is fermented soy beans no matter what the colour is 😉.

      It just keeps fermenting so theoretically you can keep it forever 😊

      I think it’s just a matter of better or best, not good or bad. Pasteurized miso is good enough already 😉🎶.

      Koji is a type of beneficial fungus grow on rice that helps miso to ferment😉.

    I bought sweet red miso and used it in a soup, I didn't really like the results. Is there any recipe that requires this type of miso?

      It’s mostly soy beans. Other ingredients are to help soy beans to ferment and to preserve.
