    Forget the cheese whiz. Use provolone and grilled onions on your cheesesteak. It tastes much better.

      Our Version of a Philly Cheese Steak uses
      Provolone Cheese, Grilled Onions, thinly sliced Ribeye Steak, Grilled/Sautéed. Green Bell Peppers on French Bread.

    Philly native here, avoid Pat's and Geno's. That's for naive tourists. The best are Jim's or D’Alessandro’s.

      This person is correct. I would give Tony Lukes honorable mention. Also any mom and pop Italian deli where there is a stressed out kid at the register and a lot of yelling in the back will probably be worlds better than Pats or Geno’s.

    56 yrs old born and raised in Philly !Jim's on South Street is the best
    I prefer mine with american or provolone cheese and fried onions. Sometimes with mayo, other times with ketchup . A splash of hot sauce is good too lol I'm not big on the cheese wiz, it's ok. The roll makes all the difference

      I agree, except no hot sauce or mayo! They keep saying baguette which is French. A real cheesesteak has to be made on a special kind of Italian roll, preferably from a local Italian bakery. Otherwise, it's not a real cheesesteak. Also, as a born Philadelphian, I have always disliked the cheese whiz.

      I moved to Kentucky 3yrs ago, haven't had a real cheesesteak since . They made it look so good!!!

    We always went to Chubby's in Roxborough, a Philly suburb. They offer a cool t-shirt there too. Rita's Italian Water Ice in Philly is great too, I love the Mango! Woo-woo. This brings back some good memories of Philly.

    Best cheesesteaks - Angelo's, Dalessandro's, Woodrow's, Jim's, Chubby's, and about two dozen small, neighborhood pizza places spread throughout the city and suburbs.

    As a senior born and raised in Philly, I will tell you that people may say they are making "Philly cheesesteak", but the real, authentic cheesesteak cannot be duplicated. Also, Pat's and Gino's are tourist spots, not where native Philadelphians eat!!!!!!!!

      Totally agree, Pat and Geno's are tourist attractions. I was born and raised in the suburbs of Philly and I'm now 43. My go to place is, Steve's Prince of Steaks!!!
      Wawa is Awesome, it's a gas/food place and lastly, Rita's Water Ice is the best. Google it!

      A meat slicer is key. I bought a commercial one from a buddy that was closing his business for $150. It's a bear but it's paid for itself already.

    Cooper Sharp is a name brand of American cheese that uses sharper cheeses in its mix. American cheese, Velveeta, and Cheez Whiz are all a style of cheese that takes traditional cheese, mixes it will dairy and whey, and reforms to a new cheese. One can think of it like a blended wine or blended whiskey.
    This is different than quick cheese like Ricotta Queso Fresca, and Requesón, which denatures the milk directly and does not blend other cheeses.

    In Pennsylvania, they call it a hoagie but in New York It’s called a sub or a submarine sandwich. Subway is the name of a place that makes the sub sandwiches. There is also a Mr. Sub shop who also makes submarine sandwiches. They usually consist of a roll with layers of lettuce, tomato, onions, cold, cuts, and cheese most people get it either with mayonnaise on it or oil and vinegar or Italian dressing. It’s the best!

    Wawa’s in Philly are gas stations, that sell food as well. Their hoagies are good, but the rest of their food is hit or miss.

    In most of the US outside of Philadelphia, cheesesteaks and Phillies are similar but different sandwiches. A basic cheesesteak sandwich is almost always thin sliced beef, grilled on a flattop, with grilled onions and peppers and provolone cheese, on a hoagie roll. A Phillie just has grilled steak and cheese whiz or more usually American cheese, specifically nothing else in the bread. Usually places that sell cheesesteaks will offer a Philly as one particular variation, as there are lots of different options, but it isn't particularly popular. Many sandwich places that don't specialize in cheesesteaks specifically may offer a choice of cheese, but the sandwich will come with onions and peppers as the default, unless you request they leave them out.
    If you make them at home, paper thin steak in a smoking hot skillet is the only key to getting it right. You can use chopped steak, as well, but it takes longer. As then it's best to cook good steak as a steak, first, and then chop it and refry it with onions and peppers or whatever. Otherwise the sandwich is pretty straight forward. If you use minced beef and grill that with onions and whatever and cheese, and put it on sliced bread, you have something more like the Chopped Cheese from New York, but equally good.

    Excellent reaction James and Millie! We have never been to Philadelphia, Pennsylvania before; this is all good information to know prior to going, at least we know we have more options than just going to Pats and or Geno's, there is also Angelo's Pizzeria. We also never heard of Cooper Sharp cheese either so it is a must try for us now! We grew up on Cheese Whiz and we are so beyond that now since we've grown up. The things we learned when it comes to traveling is when it comes eating authentic foods of the city, we always try to stay away from the touristy trap restaurants, and we look for the restaurants that are a few blocks away where the locals like to eat and perhaps at reasonable prices too.     I live in Chicago, when I order a hot dog I just ask for a hot dog. I don't ask for a Chicago style hot dog, I might have to ask for everything on it to make it a Chicago style hot dog though.

      @@coyotelong4349 I mean I don't usually say that, I know some people might say that to be different, and yes it is slang for a Chicago style hot dog. We are also known for Deep Dish Pizza here, even though people who live here would choose a Tavern Style Pizza most of the time. Deep dish is like once or twice a year. Tavern style is basically something we would eat year round.

    Finally something from my home state! I live in Maryland now but the sub shop I get my cheese steaks from has their rolls shipped fresh from Philly daily, so it's as close to the real thing as I'm gonna get without driving 4 hours.

    There is a food salt called Sodium Citrate, that comes from citrus fruit, that if you mix a little of it in with some melted cheese and a sprinkle of water will turn ANY melting cheese into a Whiz like consistency. The salt acts as an emulsifier and keeps the cheese from breaking apart into water and fat. You can make your own whiz at home with it with the cheese of your choice and know exactly what is in it.

      The additional ingredients is the reason people don’t like wiz. Cheese is a complex food made with only a few ingredients. Milk, salt, and a coagulant maybe.

      @@ryhol5417 American and other "processed" cheeses can be made of just cheese, milk and a "decoagulant" . Wiz is a lower quality food that has more ingredients. For instance Worcestershire sauce, garlic powder and mustard flour but also Canola Oil, Milk Protein Concentrate, Sodium Phosphate, Modified Food Starch, Salt, Whey Protein Concentrate, Sodium Algnate, among others.

    You can get a pretty authentic Philly Cheesesteak at one of the "Passyunk Avenue" locations in Fitzrovia, Waterloo, or Battersea

    The Philly Captain on RUclips says the best Philly Cheesesteak is John's Roast Pork in Philly. They make them fresh as you order, and they have the beef or pork. They do not recommend using Cheese Whiz, but real cheese. They have been there since 1930.

    Wawa is like a very mini Buc-ee's. A gas station and convenience store with a cult following for their made to order food. Their bitter rival is Sheetz.

    I'm born and raised in Philly, and grew up on Cheesesteak sandwiches. I have never heard, and would never put, Cheese Whiz on a sandwich. Provolone is the preferred cheese on a cheesesteak, with American Cheese as an acceptable substitute.

    In Orlando people always say go to 4 rivers bbq. It’s actually gone bad in the last year. I suggest pig Floyd or Keller’s. Yak and yeti in animal kingdom is ok but all of Disney will overcharge you. Try bonefish for a nice meal, Chinatown is pretty good if you avoid the crawfish place. The milk district is coming up though.

    If you're going to be cutting onions, here are a couple of tips for the task.
    1) Have a container of water so you can wet the blade of the knife.
    2) Knife blade is best sharp.
    Side note: freeze the meat first before making it semi-thawed so you can get amazingly nice and equally shaped slices of meat.

    Not been in Philadelphia since 2018 or so. Locally when I have the crave and an appetite, Olde City Cheesesteaks & Brew is very good and authentic has 3 Manhattan locations. The bread is from Philly. They have the pork sandwich too. I get a "pizza steak", though!

    I've had Pat's and Gino's Philly Cheesesteaks and they were good. I've been going to Philly to try all the Philly Cheesesteaks shops. My daughter lives a hour 1/2 south west of Philadelphia, so I've been to Philly countless times. My favorite so far is John's Roast Pork in southeast Philly down by the Delaware River. They don't do cheeswiz but their sharp provolone is great! WaWa is a gas station food/sundries store. It's pretty good. Nothing compared to Buck-ee's but what is? I always go there when in Pennsylvania.

    The meat used in a cheese steak is thinly sliced Ribeye, and I mean thinly sliced. You have to use a deli slicer to shave off paper-thin slices of the ribeye, a human using a knife can't slice it thin enough.

    Yeah, an authentic "Philly cheesesteak" is made with "Cheez Wiz" (available on American Amazon), and CHOPPED (not sliced; that's ridiculous) ribeye steak.
    One could make a cheesesteak with provolone and fried onions (sliced, as opposed to chopped, because sliced are thinner and more authentic), it just wouldn't be called "Philly Cheesesteak".
    Also, the rolls are really important---I like the soft ones, real well, but the "harder" ones are good, too!!

      An "authentic" Philly cheesesteak comes with American cheese not whiz. If you call and order a cheesesteak and dont specify it will always come with American cheese.

    Im from Philly and you can get whatever kind of cheese you want on it. American cheese is the standard. If you were to call and order a cheesesteak and didnt ask for something else it would come with American cheese.

    You can't duplicate this sandwich unless you get the EXACT SAME BREAD that's baked in a specific Philadelphia bakery that supplies all the local restaurants in Philadelphia.

    Philly born and bread, go to Jim’s steaks, Delassandros, John roast pork and Angelo’s pizzeria. Btw a water ice is definitely not a slushy or flavored ice. It’s like Rita’s but better quality…..come here and give it a try

    The baguette type of sandwich you're describing is called a Sub in most of the united states because the roll is shaped like a submarine. I personally, would not recommend Cheez Whizz

    HOWEVER, an English muffin is from the US. It’s not English. It was invented by a young English apprentice baker who left England at 15 years old- Samuel Bath Thomas around 1857. He held odd jobs the tried to find something to sell. He took a crumpet recipe added more flour so it wouldn’t be batter and started to sell them to restaurants in NYC. As it was New York he used “ muffin “ which is from the Dutch who colonized NY and called them English Muffins.

    We do call it cheesesteak, not Philly cheesesteak. Best cheese is provolone. I don’t like fried onions. Really, the roll makes it. I like Geno’s but when we go we get the roast pork sandwich. They are as popular as hoagies and cheesesteaks. Lots of Italian immigrants landed in Philly and some traditions still go on. Best cheesesteaks are generally in your neighborhood. There’s always a number of pizza stores and you get your sandwiches too.

    I was born in Philadelphia & love their cheesesteaks. I do however prefer the Donkey's Place cheesesteak from across the bridge in Camden, New Jersey. It's called "Donkey's Place" because it was started in the 30's by a boxer named Leon Lucas who had the nickname "The Donkey". Why? Because when he hit you, it felt like the kick of a donkey.     If you can't get to Philly then the next best place to go is a hole in the wall pizzeria in a bigger city. Some of the best cheesesteaks I've had were from places like that. And there's no way I'd try the cheese whiz version. For me the best way to go is some reallllly thinly sliced steak/ribeye, saute up some onions, bits of a peppers, and mushrooms. Then get that provolone cheese all up in there. Get it in the folds, under, behind, on top, etc. Do not skimp on the cheese. And when that bread soaks up some of the juices...mmmm mmm.

    There are a few places in Philly that are really good for cheesesteaks (Angelo's Pizzeria, Dalessandro's, John's Roast Pork, Jim's). Any of those will be good for sure. The problem with Pat's and Geno's is they are tourist traps now. They used to be awesome when I was a kid but now they are over crowded, overpriced, and just mid on the flavor.

    I have caused 1 fight by asking for a steak sub with American cheese, you have to ask for a cheesesteak and order fast Phillies don't play around if you hesitate on your order.

    if you ever get an opportunity to eat a real cheese steak ( and this means provolone cheese, grilled onions, and mushrooms are optional, but a fine idea--Cheese Whiz is vastly inferior), take my advice and schedule a nap as soon as you're done. You'll need it.

    I like Tony Lukes or Campos for their cheese steaks wiz wit all day. Also Wawa isn’t a super market it’s a gas station that has a cult following and IS Superior to Sheetz and Royal Farms

    Angelos, Jim’s, Delassandros and John’s Roast Pork are all very good. Don’t do Pat and Gino’s. Tourist traps.

    Depends on how you like your cheesesteak definitely stay away from pats &geno’s there tourist traps I’d say stick to Dalessandro's , John’s roast pork , Jim’s south st

    As a native New Yorker for 48 years , I promise you cannot replicate a Philly cheese steak 🥩. The bread is from one bakery only for it to be authentic, the meat must be paper thin and the cheese must be WIZ

      My 1st job was in a sub shop in south Jersey by Ocean City. Lots of Philly tourists who will not tolerate a "wrong" cheese steak sub. I was in the back slicing the meat very thin. Back in 71 You cut it partially thawed. We had a big automatic slicing machine. 2 very thin slices and slap down a piece of wax paper.
      We used provolone unless they asked for American. I love white Cooper sharp American cheese. $$$ though. I believe there are 2 camps of cheesesteak lovers in Philly. Half only want cheese wiz. The other half use something like what you or I mentioned. I hate cheese wiz and we never used it. Miss those subs. I live up in Bergen County NJ now & they don't do it right. They didn't when I lived in Florida, California, NH, SD either. I went to the Poconos once & got a cheesesteak up there & they did it right also. Not that far up from Philly.

    Cheez Whiz is maybe not quite as bad as it sounds; but if you're going to get a Philly cheesesteak, do yourself a favor and get it with real cheese. Provolone is traditional; but Swiss (especially baby Swiss, Guggisberg Swiss if you can get it) would also be good. I'm not familiar with the second cheese they got; maybe it's local to the eastern seaboard?
