  • I received the most delightful cook book (France The Beautiful Cookbook) as a birthday gift from some very special friends! It's filled with authentic recipes from various regions of France, and I can't wait to share one of them with you!
    For an upcoming gathering at my friend's house, I decided to prepare a Provençal Eggplant Mousse, which is an Eggplant Appetizer. I wanted to keep it light, and that's why I chose eggplant as the main ingredient.
    The recipe, Papeton D'Aubergines, originally calls for a Charlotte mold, but since I don't have one, I'm using a Springform mold instead. For food sensitivities, I'm substituting dairy with sheep's cheese, specifically Manchego Cheese.
    The ingredients for this recipe include eggplant, thyme, garlic, eggs, Manchego cheese, tomato sauce, olive oil, salt, and pepper. It all came together beautifully, and I'm absolutely thrilled to share this delicious creation with you!
