I did this yesterday with Guinness as the dark beer. It was so delicious and Mrs loved it as well.

Hey akis I'm going to use some calf meat instead of pork I actually wanted to make stew but didn't want to wait 3-6 hours, this is perfect
I am afraid of vampires so I cannot cook a meal without Garlic. I added Red Peppers,as well. I finished in a pressure cooker instead of simmering because I am lazy.
Turned out fantastic.

Just one thing (atm my Stew is on the oven so more for the next time) - you do not touch it for 1hour (so no mixing up or stuff like that?)?
I probably would have diced up the onions really fine and fried them off while roasting the sausage and pork in the oven... simply because I cannot stand the texture of most veggies XD
Works fine as well! But just saying, if veggies are simmering for 1 hour or more, they become very soft and give you a totally different texture experience. If you haven't yet, that's the way to learn to appreciate veggies texture :)

very good recipe. :D I replaced the bay leaves with Labrador tea and I added some dunes peppers plus mirica seeds. I also infused the basmati rive with thym. The combination was awesome. 🤘
what are the mirica seeds? never heard of them

Naveen Akalankla Sahabandu you can add flour to the frying meat to make a small rue and slowly add the any kind of stock ie. chicken or beef
