I added a good slug of Worcestershire sauce, flour to thicken and a few stock cubes before cooking on slow for an hour. It tasted lovely.

i ve been born and raised with pork and stews so based on this i can tell you that neck and tenderloin are for grill,or methods that don t require more than 30 min on fire. For the stew, you need cheeper cuts, pieces of pork(beef) that require longtime cooking, pieces that also have collagen, so that the sauce is thicker, helped by the starch from the potato.Bone and marrow gave more flavour. What makes also the difference between good and very good is the time allocated for cooking the onion. You need 30 min at low temp, just like for the goulash and once it s done you can add the rest for mirepoix

If you don't mind paying more, why not? Many other pork cuts are just too tough for some people and take longer to cook. In this case, you can use tenderloin instead for a quick stew or goulash.

Without a thickening agent I’d consider this more soup than stew. Looks good, though!

If you don't blanch the potatoes first, then the starch escapes into the broth and acts as a thickening agent.

No, it's not genius... it's a stew. Something your grandma, and every other grandma since the invention of pots, knows how to make.

With that cooking time the pork will be inedibly chewy. Also pork neck or tenderloin? They're vastly different cuts and require different cooking.

The basic recipe is sound and similar to the one pot dish I do but I'd up the simmer time to at least an hour
A few teaspoons of flour and tomato paste at the beginning of the simmer to thicken it up too
