    So this is the 3rd recipe I have done ( chickpea and lentil soup ,masala omelette being the other two) and all three have been an absolute winner , thanks, can’t wait to try the next one .

    The dish was a dish developed by cooks of the British Raj as a way to use up leftovers using a cooking technique introduced by the Chinese. Instead of the braising the chicken and peppers together for hours like most curries, the ingredients for Jalfrezi are quickly stir-fried. This not only makes it a viable weeknight meal, but it also preserves the flavor and texture of the peppers and onions.

    Your mom seems like a lovely cook. Want to try making this dish. Btw, I have a request for you/your mom. It would be nice to see her version of a Mughlai chicken or a rustic home-style chicken curry.

    There are so many different curry powders. I need more information what kind of curry powder you put in there :) Thx in advance. Btw: Cooked your tikka masala and it turned out to be the best curry i've ever had.

    Aloha, Chetna. I’ve just harvested my first crop of homegrown turmeric root. I am going to slice, dehydrate and grind into powder. QUESTION: should I boil and/or peel before dehydrating, or not? I would be grateful for advice from you and Mummy-ji. Thank you 🙏🏻🇬🇧🇺🇸

    Does anyone know how many onions are used? Would they just be blitzed with a little water / oil to make the paste?

      use one or 2 onions and blitz, no need for water or oil

      Sadly I don't use frozen meat at all, always fresh and from the butchers.

      Yes it's good to go with fresh chicken but staying in US sometimes I end up cooking with frozen chicken

      Food with Chetna Yes! For example, a quick chatpata alu sabzi with ketchup and few spices when short of fresh tomatos or packaged puree!
