    "In traditional Japanese cuisine, there is a progression in how the dishes are served. Heavier favors are served later in the course. There is an ebb and flow to the menu. For 10 years Jiro pondered ways to incorporate this concept into his menu. Seven years ago he formed the structure of the tasting course which he serves today. It is like listening to music. Jiro’s sushi course is like a concerto. The meal is divided into three movements. Classic items like hirame, ika, aji, akami, and toro are presented in the first movement. The items in the second movement are fresh catches of the day. Hamaguri, shima-aji, ebi, sayori, tako. In the third movement, anago, kanpyo, saba, uni, kobashira, ikura, and tamagoyaki comprise the traditional finale."

    Born in 1925, Sukiyabashi Jiro Honten owner Jiro Ono is recognised by Guinness World Records to be the oldest living Michelin three-star chef (and thanks to David Gelb's documentary Jiro Dreams of Sushi, he's also now a familiar face to cinema-goers worldwide). A visit to Sukiyabashi Jiro Honten should be treated with the utmost reverence - just try not to show your surprise when the meal ends about 20 minutes after it started. Diners should expect to pay at least ¥30,000 for dinner, and be warned that they don't accept credit cards.

      ⁠@@WickedHole That fish is glistening because of the nikiri sauce it was brush with before it was served, now what’s making it glisten is that one of the ingredients of nikiri is a cooking sweeter called Mirin. Which is high in sugar making it kinda syrupie.

    Japanese food review sites don't rank Sushi Jiro that highly though, usually placing him outside of the top 10, or even top 20, spot.
    The ones that consistently maintain rankings in the top 3 are restaurants like Saito or Hashiguchi.

    honestly if you just ask chatGPT to teach you how to make sushi, you will find out that it's super easy and simple. There aren't that many ingredients even, and you know what ingredients YOU are using. Instead of some strange man touching the food here and there; who knows if MSG and other things are added?
    I also wonder if sushi chefs can possibly be replaced by robot in the future.

    Nothing against skill and knowledge of all sushi chefs. But what I see is that sushi is just "art" and "philosophy" vastly inflating the actual value of the product. And apparently anyone who thinks like this is labeled uncultured. Very convenient

    I went for a meal at Jiro's some years ago. During the service, I coughed. Jiro got angry and said, "NO SUSHI FOR YOU ! !" and threw me out. True story.

      Um.. Must be an isolated case then, i have been to Jiro's Twice, once even with a cough and they just asked if i needed a tissue... so yeah (I dont mean to offend you or anything just saying it could have been an isolated case). Even so it is basic asian etiquette to wear a mask if you have a cough.

      It just looks simple. But people study for decades to master every step of making it.
      It's a very traditional dish that evolved through the generations. There's a lot of baggage in it :)

      It's a traditional type of dish, with lots of knowledge and techniques involved. People study for decades to perfect it. It's just disrespectful to say it's disgusting or easy to make. Just say you don't like it and it's gonna be fine..
