- Here is an easy recipe for a Korean rice porridge called juk 죽. It can be enjoyed as a breakfast or light meal and also serves well for someone feeling sick.

◇ INGREDIENTS | 재료 ◇
⇾ 2 cups Korean sweet rice 찹쌀
⇾ 2 cups water 물
⇾ 1/4 medium zucchini 호박
⇾ 1/3 medium carrot 당근
⇾ 1 tbsp sesame oil 참기름
⇾ 2 shiitake mushrooms 표고 버섯
⇾ 1 scallion 파
⇾ 1 egg 계란
◇ RECIPE ◇
1. 0:10 Rinse the Korean sweet rice 2-3 times and let it soak for ~15 minutes.
2. 0:16 Wash and cut the vegetables into fine pieces.
3. 0:51 On Medium High heat, add the sesame oil and Korean sweet rice. Stir for about 2-3 minutes. Then add in the vegetables.
4. 1:27 Pour the water in little proportions. Add less/more water depending on the desired consistency.
5. 2:11 Once the rice is almost done, add in a whisked egg and stir.
6. 2:37 Add salt to taste if needed.
7. 3:05 Enjoy with a 1:1 ratio of sesame oil and soy sauce.

Which rice cal l use instead of sweet rice? We don’t have that here in my country
I tried with short grain white rice, jasmin rice or sushi rice. Haven’t try with long grain rice yet. You can give a try, it can be a new recipe!

This is such an interesting way to make this dish. I'm so used to the Chinese version Congee, so i'm very interested in trying this method oout, since it doesnt seem like the rice needs to be prepped beforehand, like with chinese congee.

i'm sorry if this is a really silly question but i've never made porridge with rice before! the rice is uncooked before hand right? i can't tell 100% on the video and i looked up other recipes and some of them precook the rice and others don't
Yes, I used uncooked sweet rice. People do use leftover cooked rice but I like the texture better when cooking it with uncooked rice!

what can i replace sesame oil with?
You can use any cooking oil but olive for cooking the vegetables but I would only use sesame oil for the sauce. I hope you enjoy the recipe!

I have been looking at a lot of juk recipes and everyone else’s seems to have a 6:1 ratio of liquid to rice. Is this correct that your recipe is only 1:1 ratio??
How long do you have to boil it?
It will take about 20 minutes on medium low heat. Don’t forget to stir occasionally!
In Bangladesh we call it Jaow rice ( জাউ ভাত)

It would be easy for your stomach to digest. I would recommend warm honey teas (1 cup warm water + 2 tbsp honey), which help to burn alcohol fast. Have eggs, banana, and a good rest! 🙂

i've learned to smash the rice in mortar/pestle type to break up the rice after washing, makes the porridge tastes better. doesn't have to be complicated- just adding minced carrots, tuna or even abalone, crushed seaweed & of course sesame oil/seeds and a bit of soy sauce makes it great. also eating it w/ cubed radish kimchi is so good
