- Using stiff consistency, "crusting" cream cheese icing, I demonstrate how to ice a cake smooth using the cake icer tip #789 (amzn.to/1vvf7B6) and Viva paper towels (amzn.to/1hYQ9RA).
This is how I iced the tiers for a wedding cake I made last year (www.cakedarla.com/2013/09/29/w..., and three different people asked me if the cake was covered in fondant, so this is an effective method.

Would it not be best to bring the filling level with the lip so that the base of the next cake is in contact with the filling so as to avoid an air pocket?

to fill a cake you need to create a dam before adding the filling!
