Stir and bake crustless pie! Squash / courgette / zucchini quiche!

- Easy peasy stir and bake "skoosh" (squash/courgette/zucchini) crustless pie / quiche / tart! Here's the recipe for "Lottes nemme squshtærte" which I got from my lovely friend, Sue! Do you use the Flylady system - we menuplan once a week. This is a great recipe to use up what you have in your fridge!
Mix everything together and cook in a tart tin (circa 10/11 inches, 24-26 cms) for approximately 45 minutes at 175c/350f.
700g of squash/zucchini/courgette (or any mix of veggies - use what you have in the fridge/pantry!)
200g of leftover chopped ham/chicken, etc
200g of grated cheese (I used mozzarella)
30g (about 4 or 5 tablespoons) porridge oats/rolled oats
95g flour (about 9 or 10 tablespoons)
1 teaspoon of baking powder
¼ decilitre of oil (about 2 tablespoons) - not essential
3 eggs
1 decilitre/100mls of milk (about half a cup)

Diane thank you for your inspiration. I went ahead at 12 midday and made my frittata out of my leftovers. Ifound a pack of broccoli carrots and cauliflower already washed and cut ready in my fridge. I steamed them in microwave for 3 minutes. My husband doesn't approve of microwave. I Used a mix of olive oil and sunflower oil and sauteed an onion sliced in rings .I put the steamed veggies in the pan a nd and mushrooms and poured the 4 eggs and cheddar cheese and milk mixture into the pan. I did add salt and pepper. A little mix then let it cook To brown the top I flipped it on to a plate then slid it back in pan. You could put it under grill but I just couldn't be bothered to wait for the grill to heat and I found it easy to flip back in pan. It looked like yours. 15 minutes from start to finish. Great for a quick lunch. When I have more time I will try your skoosh tart. Love Margaret

Dear Diane, this recipe has become one of my very favourite ones! I have cooked it at least 15 times since you have uploaded it 😀! Fun fact is that I don't eat meat or dairy, so I have proved this recipe is very very versatile 😅!

I made this recipe today. I used a mix of courgette, drained canned corn and grilled green peppers, leftover roast chicken and substituted the milk and the oil for 1/2 cup of cooking cream. I also added a 1/4 tsp of salt and 1/8 tsp ground black pepper. It was a nice lunch with a starter of vegetable soup and a salad on the side :-) Thank you.

I used a frozen roasted vegetables enveloppe, (eggplant, zucchini, red bell pepper, yellow bell pepper, yellow onion, red onion, ) ricotta cheese (the only one since we can't go out because of the record snow storm we had last night and today . Very very delicious recipe! Funny I had and used a Sottish oatmeal ...I will do it again and again this wonderful dish!
Hello, I am new to your RUclips channel. I have been enjoying and learning new tips and tricks. I tried this recipe tonight using what I had in the fridge. Broccoli, sun dried tomatoes, turkey and cheddar cheese. I did not have any oats so I used some Panko style bread crumbs. It came out delicious and I know my husband will enjoy the meal! Thank you! Yum!!!!! I was soo excited when I saw a recipe from you, and bonus, one with🥒 squash. We have recently began eating yellow 🌽squash and spaghetti squash. Until now, we would only eat zucchini squash when it was made into a sweet bread or cookies. I can't wait to try this recipe; I already know that we will LOVE it. Think I'll add in some broccoli as well, like you did, bc DH and DD love broccoli. And, some black pepper and granulated garlic ..only bc we add those spices to everything😋😋Thank you again for sharing; Happy Wednesday!! P.S. Concerning clothes swap parties: I mentioned that a few times, so far nobody has heard that, but people seemed really interested. AND: I found a second hand warehouse where I found a nice dark blue summer blouse with small light blue squares for 5€... I could have worn it today: about 19°C!! AND I walked a whole hour in sun- half moon shine, wonderful, free vitamin D, fitness and a lot of nice views. Wish you a sunny weekend, love, Monika❣
I make something similar here in Scotland. My family calls it „Shaked Pizza“. You put everything in a bowl with lid, put on a lid and shake it like mad. But we always put in a tbsps vegetable stock, salt and pepper and herbs. Haven’t done it in a while.

My dad spent some time in Spain and got a recipe there for a dish called Tortilla Espanola that reminded me of this. It is based on eggs and potatoes instead of squash. I will need to try this. Very considerate of you to do imperial measurements for those who aren't metric. I am a Type 3 but am bonkers about your apron!
Thank you for going to the extra mile and doing the conversions. I get so confused seeing grams and liters..haha I have to convert to cups and tablespoons to understand recipes. For those wondering, 200 grams is nearly a cup ;)

My husband used to make frittatas which were also easy to make and would be done in about 15 minutes. If you are cutting carbs they are a good idea because you can make it without the oats and flour and you don't necessarily have to put higher carb veggies like potatoes. I thought your skoosh tart looked great though. Did you use broccoli? Yummy. Xxx Margaret

Hey thanks Diane for sharing :) What a ripper of a recipe to use up the fridge vegies. Q. Does it firm up and is it tasty when it is cold? Its summer here and I am always looking for something to take to add to the BbQ fare.
It's great cold from the fridge (I've just eaten another bite 😄) and I'll be taking it for picnics in the spring/our next Clothes Swap Party pot luck 👍🌱🌱🌱
Coconut or avocado oil would be a nice healthy substitution. :)
In the USA we have color coded milk too. Red is full fat and white is skim.

Well I'm making something similar for dinner tonight. I've never made a quiche before of any type. And because I don't know how to convert deciliters in all of that into cups, I Winged It. We'll see how it goes. If it's horrid I promise not to blame you. I think I put in about twice as much flour as I was supposed to. I'll let you know in the replies to this comment.

No, the courgette and broccoli were raw. But, as I said, if you're planning to use something "hard" like carrot you'll want to grate it, or chop it small and sauté it lightly, or use cooked leftover carrot.

The squash probably releases liquid.
milk carton colors same in USA, Red cap is full fat, blue cap is 2%, etc.
Interesting! Full fat for us is dark blue. Red is cream.
Red in UK is skim.

@@DianeinDenmark Made this for tea ... It was lovely, I used tinned tuna instead of meat, added broccoli, leeks, red pepper and courgette ... put a little garlic in. Some left for tomorrows lunch, husband enjoyed it too. Easy and economical to make!
I always whisk the eggs , oil and milk together first..
