  • Instant Pot Beef Stew! How to make my Scottish Mum's stew in the Instant Pot, an easy recipe for beginners! My Mum is Scottish (we're from Edinburgh) and I remember her often making this for our dinner (or tea, as we call it there). Super simple speedy dinner, all in one pot (carrots and potatoes are steamed on top), minimum prep! Mum always made hers in a pressure cooker but the instructions for the Instant Pot are the same.

    Made this for dinner last night and served it with pickled beets and homemade garlic bread. I hadn't eaten all day so had 2 bowls with a cold Tuborg! Great stew, hearty and flavorful. I made it exactly as shown but stirred in a couple squirts of Dijon mustard and, towards the end, a 1/2 tsp. of cinnamon, which doesn't taste "cinnamony" in the stew but adds a certain richness. I always add a bit of cinnamon to beef stew/bouef bourgigion. A dash is good in spaghetti sauce also.

    That cut of beef is called chuck roast in the states. I'll use a large chuck roast for pot roast or I'll cut it up into chunks to make stews. It is a cheap cut of meat but when simmering for hours in the Crock-Pot, it's as tender as filet mignon. Yummy! (I always add several shakes of Worcestershire to my beef stew - it adds so much flavor and richness.)

    What a brilliant idea of using the trivet. I never thought of using one to keep the veggies separate.

    Thank you so much Diane. I will definitely try this the next time my son comes for dinner. I really appreciate all the different types of videos - always uplifting and inspiring. An update on our challenge: I moved some furniture around (which I could have done a long time ago...) and now can watch your videos while I do my daily 15 minutes on the treadmill. The time flies thanks to you!

    Looks delicious. Great idea putting the steamer basket on top of the stew. 👌
    Loved Edinburgh, so pretty, so beautiful. I laugh when I look at my photos of the parliament building with the pods on the side, where the executives can go and be in solitude and consider their decisions. The tourist guide said “they go there for a nap.” Lol

    That is pretty much the same exact recipe that I use and I love it! I did not know you could get a steamer basket for the instapot. Looking into that. But thank you for sharing. Quite often I use your videos for my timer. They always work out perfectly

    My mama also used her pressure cooker regularly but I was always leery of them until I got my Instant Pot which I LOVE! ❤️

    You make your stew very much like mine, except I add a bay leaf, celery and cabbage. It also is my mom's recipe, including the Worcestershire sauce! 🍲 Small world!! It looked delicious! I could almost smell it all the way over here in sunny San Diego, California! I'm eager to see what you cook next! 💖🍽😋🌹🌿

    Love seeing your recipes - especially the Scottish ones- since that’s largely my heritage. Love to see the similarities- even after almost 300 years in the US. We always put neeps in our “Scottish” stew. 😁 But, we start with a roux - and that’s French - so I guess we really make hodgepodge American stew. 😆. A little bit of everything from everywhere.

    Yum!!!! In the U.S. we call this simply, "beef stew." All of the same ingredients! Except, we stew it all together as one, with the carrots and potatoes mixed in. I grew up however, not liking carrots, but would eat them when they were mixed in with the meat and gravy because they tasted of meat, haha. I have finally acquired a taste for carrots. I have noticed that Danish cooking includes carrots and potatoes always. And your produce (carrots, celery)always look so fresh!! We eat beef stew with white bread rolls or, over white bread. DH loves beets. Thank you for sharing; what a wonderful cook your Mum is😋😊

    I got an InstantPot for Christmas but rarely use it - one person here. I will try your mum's recipe because it would work as a leftover, too. Thank you, Diane! PS I love beets and buy them in a jar, too messy when I make them. lol

    My mouth was watering watching this video. I make beef stew a lot in the fall and winter but never added tomatoes. Will try it tomorrow. Love Lea & Perrins, used it in my beef stroganoff earlier this week. It's the best worcestershire, I think. This stew is the type of cooking I grew up on. My mother was from New England (Maine) and favored simple, hearty stick-to-your-ribs food ("meat and potatoes" in a delicious gravy with buttery brussel sprouts on the side, and... pickled beets 😍). I love these type meals and will be making this for dinner tomorrow using my crock pot. Thank you, Diane's mum! 😋

    This week (which is half term in UK!) looks to be pretty dreary and cold so this could be an ideal slow cooker dinner, although we aren't great meat eaters, we may go with a chicken option and pop herb dumplings in for the last 40-60mins...scrumptious! Thanks to you and your lovely Mum Diane. Today we made Rhubarb & Orange Jam and instant hot chocolate mix...and there's a loaf baking in the bread machine...mmmmm! If you could only smell our kitchen xx

    Do you remember Burdall's Gravy Browning/Salt? It was in a yellow oblong container and my Mum/Gran always used it when making gravy. Pickled Beetroot (baby, crinkle or straight cut) and Pickled Walnuts were also popular!! Having stew for dinner today but do it in the oven. Lorna

    Hi Diane, I really enjoy your channel. I like the way you make it on a 1 to 1 basis. It's like you are having this private session with just me. That's what I try to do on my channel. You just do it so well. You're just using your android phone for your videos? With a table top tripod? Do you have it in the "Selfie" setting? Not sure but you seem to be to see yourself and what you're doing, while you're doing it. Wow, that was a real mouthful. I hope you'll have time to answer my questions. Please keep up the great work. I like your kitchen layout.

      Yes, I use my telephone (an old android), front camera (selfie setting) and use a small tripod.

    I don't have an instapot. Do you think it would work in a slow cooker or just on the stove? Obviously would take longer.

      Yes my family also Scottish made this on the stove top, we liked to put the carrots in the stew and near the at the end popped in the Onions.towards the end put in a browning gravy and some cornstarch to thicken the gravy.

      Neeps are turnips. Very popular in Scotland but not common in Scandinavia (turnips are cattle fodder here). My Mum uses them a lot in soups and stews.

    nobody should be murdering cows. be vegan, folks! my first change was to a pescatarian diet (fish and shellfish allowed). now I'm a vegetarian (stuck on dairy). ultimate goal: vegan. live with compassion and love. 💛🐮💛 plus there are healthy proteins: artichokes! avocados! beans of all kinds! chick peas! lentils of all kinds! nuts of all kinds! quinoa! tofu! etc!

      In vegetarian and make something so similar and it's my favorite meal. I could eat it everyday. Just leave out the meat, broth, and Worcestershire sauce. I use Lipton's vegetable broth. I don't use tomatoes, but sounds good. Toasted sour dough bread with some butter, and oh my goodness...just make it to suit you and family😊 thanks Diane!😊

      @@laurajensen9941 that's wonderful. 😊 I'm thinking chick peas would be nice in it. chick peas and tomatoes. you can always make a nice worcestershire sauce without the anchovies.
