Ingredients:
For Sauce:
1 25 oz. Passata di Pomodoro or 28 oz. San Marzano/Peeled tomatoes
2 cloves garlic
4 tbsp. extra virgin olive
For Eggplant Prep:
2 large eggplants
4 eggs
1 cup flour
1 cup bread crumbs
1 pound mozzarella sliced
1/2 cup Pecorino Romano grated
Fresh basil
Salt
Pepper
Parmigiano Reggiano
2 cups peanut or sunflower oil for frying
Directions:
Preparing Sauce:
Step#1- Add oil and garlic to pan and sauté until garlic is golden.
Step#2- Remove garlic and add tomato passata a little at a time and let it fry gently.
Step#3- Add remaining, add water to jar to rinse. Add to pan. Bring to a boil and lower heat. Add salt and a few leaves of fresh basil. Let it cook for 45 minutes.
Preparing Eggplant:
Step#1- Beat eggs, add salt, pepper and pecorino romano.
Step#2- Peel and slice eggplants in rounds about 1/4 inch thick.
Step#3- Take 2 slices and add a slice of mozzarella. First coat with flour, then dip in egg wash and finally into the breadcrumbs. Make sure that the breadcrumbs sticks all around the eggplant. This avoid the cheese running out when frying.
Step#4- Fry in oil at 350°F until golden on both sides. Place on paper towel to absorb any oil.
Bringing it all together:
Step#1- Plate and pour steaming hot sauce on top.
Step#2- Grate parmigiana Reggiano and far sun with fresh basil.
The Eggplant in Carrozza is wonderful just fried too.

I just love watching you cook! You could fry a sponge in olive oil and I would try it! Your videos make even a complicated recipe look so easily manageable in steps. I had never heard of this recipe and since I love all things eggplant I will definitely try this! I love recipes that I can do ahead so if I have company I can enjoy my guests and get my kitchen cleaned up before they come over. I think this could be made ahead and warmed up before serving. Love this and I love you!! Thank you for keeping me rooted in my heritage now that most of my relatives have passed. Bless you and I hope to slowly watch all your videos!

Molto Bene! Love this Recipe i always made Mozzarella Corrozza at best with imported Pepperoni yes born and raised in world famous Bensonhurst Brooklyn NYC. Love this Recipe ❤Love the Channel Period! Lol. I got to make this with the Eggplant reminds me of my Nonno and Nonnas recipe and the garden miss them 🙏 especially the 3 day homemade sauce family events. And Mutti is my favorite tomato too I love their cherry tomatoes!!! Those especially remind me of Italy. When I lived there my “mom” just put oil garlic and a small can of Ciliegini in a tiny pan and in a matter of minutes the most delicious sauce I’ve ever tasted. When I used the Mutti decades later I was absolutely transported back in time!
Their plum tomatoes really bring me back to my childhood too. Like that scene from Ratatouille with the food critic. 🥰

I enjoy your recipes .. true your home sauce is always best don’t know what it is with restaurant sauce it’s awful I’ve never tasted a restaurant sauce that was good .. that’s why I’m fussy when I go out to an Italian restaurant .. There’s a good recipe with eggplant and tomatoes that Turkish cook it’s really a good one and easy .. similar to caponata .. just that their spices are a bit different ..

what is your favorite way to make mozzarella in carrozza? There are so many different versions.
Pretty much the same way like I made the eggplant. I like a rustic sliced bread and not the American type but more like a panella. I will do a recipe video on it hopefully soon. Thank you so much for watching 💕💕
