      A local cafe near me serves a “mozzarella stick grilled cheese” that is mozzarella, provolone, parmigiano, tomato, basil, and the outside has bread crumbs fried on. They serve all their grilled cheeses with a small cup of deliciously thick tomato bisque for dipping.

    Wow! I have .forgotten about MOZZARELLA IN CARROZZA.
    My father used to make them on special occasions together with arancini and calzoni.
    Sometimes. He will add some Ham or Mortadella to the filling.
    Very tasty as well.
    But as you said , it's quiet Heavy as it is DEEP FRIED BREAD.

      Hi Ramya vegan mozzarella is delicious. I tried it 2 years ago for the first time and I was surprised. I love the cow milk mozzarella but the vegan option its an amazing substitute. I am amazed at how good vegan ricotta is

    This dish reminds me of the classic grilled cheese sandwich, except we don't batter and fry it. Do Italians pair this sandwich with anything? In America, grilled cheese and tomato soup are seen as a married couple! Can't wait to try your recipe, Vincenzo!

      The chemistry would be entirely different, I doubt it would be bad but perhaps your should stick them in the oven on low, get the cheese melted halfway, the bread toasted slightly, take them out and brush them with butter, toast the rest of the way.

      Meglio la fiordilatte, la mozzarella di bufala quando viene cotta diventa gommosa e perde troppi liquidi!

    So the egg is the secret for the oil not to be absorbed by the bread and become oily and heavy to eat

      Yes thats correct, and for added effort you could also pat dry it using a kitchen napkin. It will also help absorb the excess oil.

      hot oil is how it prevents from being soggy.. when food is fried in oil of the correct temperature it cooks it and dehydrates it nearly instantly and creates a sort of crust that the oil cannot get through.. if the oil is too low of temperature then it does not cook the outside fast enough to create that barrier and oil seeps in.. fried food gets a bad wrap because of the oil, but if done correctly you are consuming very little of the oil
