- Eggplant in Carriage or in carrozza, an Italian dish of sliced eggplant battered and fried with a filling of mozzarella cheese. It's crispy with a cheesy centre. This is a tasty appetizer that I prefer served with a tomato sauce such as marinara to cut through the richness. It’s crispy on the outside and soft and cheesy in the centre. cuisine and languages are the two factors, who shares a common root. I'm indian. To be specific, a bengali. And here, we called this recipe 'Beguni', as eggplant is named here as begun. The better is ltl different although. Moreover, we rarely use cheese in beguni.
Nice! Try gram flour instead of regular flour, then yeast not required. It's gluten free, healthier and tastes better :)

Just one humble comment from a neapolitan who has just discovered and appreciated your videos: the mozzarella cheese you show has nothing to do with the "real" mozzarella. Yours has just the shape and the color of mozzarella, but nothing else. i wonder where yours is produced.
But: In Naples we have "mozzarella in carrozza" a very old take away dish, where between two slice of bread we put a slice of mozzarella and fry it, after we dip the whole thing in a bath of two beaten eggs.
It's an Australian Mozzarella, obviously not the genuine Italian one, but I'm curious what makes you say it's not real, yet it looks the same shape and colour, how do you know without tasting it? Thanks Luigi! 😀
@@recipe30 I am sure you consider "good" your so called mozzarella; if you have been to Naples and tasted the real one, made from buffalo milk, you know what i am talking about. Even if i go to Roma, 200k north, the local mozzarella, not from buffalo milk, is very different. As far as i am concerned, by definition, anything similar is just fresh cheese. Anyway congratulations for your brilliant videos. Today i am going to try the Turkey pie. One recommendation: do put quantities: it makes our life easier. p.s. i hope all fires in Australia will be extinguished soon!!
