  • Italian Potato Croquettes | Potato Croquettes Recipe | Crocche’ di Patate
    Ingredients:-
    5 lbs Idaho baking or Russet potatoes (2.2 kilograms)
    2 ounces of butter (60 grams)
    5 eggs ( 3 toils to mix in the potatoes and the rest for the egg wash)
    3/4 pound of mozzarella (325 grams)
    3 tbsp fresh parsley chopped (optional)
    1 to 2 cups all-purpose flour ( 140 to 280 grams)
    2 cups plain bread crumbs
    3/4 cup Pecorino Romano
    Salt to taste
    Fresh cracked pepper to taste
    Optional:
    3 ounces of ham sliced (optional)
    2 cup or more frying oil I use Vegetable oil (480 ml)
    Directions:-
    Step#1- Wash your potatoes and place them in a large pot filled with water to cover the potatoes.
    Step#2- Let them cook until you insert a knife and they’re soft.
    Step#3- Drain and they need to be peeled while hot for ease removal of the skin.
    Step#4- As you peel each potato mash them with a ricer in a large bowl.
    Step#5- Once all mashed add butter, salt, pepper, and Pecorino Romano cheese. You can also add your parsley and ham.
    Step#6- Let the potatoes cool before adding your eggs. Taste and adjust the salt and pepper. Add your eggs.
    Step#7- In 3 flat type plates, (I like Pyrex pie plates) in one add the flour, the second the eggs, and the third the bread crumbs.
    Step#8- Cut your mozzarella in a 1 1/2 long stick. Like a little log.
    Step#9- Grab the potato mixture and form a ball, with your index finger press in the middle to create an indentation for the mozzarella. Roll the mixture to cover mozzarella and create an oblong shape.
    Step#10- Dip in the flour, then the egg, and then the breadcrumbs.
    (They are best if made a day in advance and fried once they are overnighted in the fridge).
    Step#11- In a small fryer or a 2-quart pot filled with 2 cups vegetable oil bring to a 350 degrees Fahrenheit. Add the croquettes gently one at a time. Do not overcrowd otherwise the oil temperature drops and they’ll open.
    They’re best if eaten immediately.
    Leftover croquettes (never happens in my house!) can be warmed up in an oven at 400 degrees Fahrenheit for 5 minutes.
    This batch makes 32 medium croquettes.

    I have said this before about this woman, she is one of the best Italian cooks, being from Brooklyn I know good food, she does it right and loves what she does, I appreciate your recipes I am also from downtown Brooklyn been removed to California in 85, Had a hard time adjusting so I didn’t and I just made the food that I grew up with, wondering if you were from the same neighborhood LOL

      Thank you so much for the wonderful complement. Most of my recipes is what I learned from my mom, grandmother and my aunts that live in Italy. I too was born in Vico Equense it Naples. It’s a coastal town between Pompeii and Sorrento. I started to Cooking Channel to pass on the recipes to my daughters. Super happy to say that it has gone a little further. Thank you for watching my videos. I recently was in California and every time we passed a lemon tree I would scream in the light. It reminds me so much of my hometown.     My husband and I were just talking about croquettes we bought them from the Italian pork store. They were good but they were not like my deceased mother-in-law‘s that looked just like yours so now I have the recipe that looks just like hers. Can’t wait to try them yours look beautiful. My mum makes them the exact same way, really delicious 😋 I have also made them with half rice to potato mixture (no mozzarella) instead with finely chopped garlic and parsley and rolled the same way in egg and bread mixture.       I need to share this funny story…at my children’s birthdays they choose the menu and of course I need to make 75 to 100 of these croquettes.
      At one party I saw my nephew at the dinner table not finishing his food so I asked him why. His reply was “I just had 12 croquettes for appetizers “ lol
      No wonder he was full 😂🤣😂😂

    I’m so glad I found you on the Italian Facebook page! You cook just like my aunt who is from Naples and all your food has brought back memories of eating her food, I’m definitely going to make a lot of your recipes, do you make Pasta e Patate? I see you have pasta e pisele, I’m so excited to re-create my aunts dishes through you. I have the Sopranos Cookbook And there is a recipe in there which is almost exactly like my aunts.

      @@alessandrasfoodislove The last time I was in Naples was when I was 13 and then again at 16 when my grandpa passed away, I am 59 now, I was there in 1973 for a 2 month vacation and came back 35 lbs heavier 😳 Italian food that I would eat in America cannot compare to the Italian food in Italy! then 1976 for 3 weeks was the last time I was in Italy, I would love to go back, I tell my daughter that’s my dream vacation, The sopranos cookbook is wonderful but all your videos that I’ve been watching you cook just like my aunt and mom, I’ll be looking forward to that video whenever you get to it, thanks again for all the beautiful memories you have brought back to me since I found your videos, ❤️❤️❤️ God Bless You!!

      @@lovemycat61 I read your message in one breath. I am so happy that you were able to experience Italy. The food is just incredible there. I was born in Vico Equense, a coastal town between Pompeii And Sorrento. Came to America in 1975 and I was 10 years old.
      I hope you get to go soon when this craziness is over. Do spring or fall because they’re the best seasons. Because of my youngest daughter’s school we go in August and sometimes it’s just crazy with tourist and very hot. Hope to be doing some videos from there. Thank you always for watching. 🥰🙏🏻🇮🇹

      @@alessandrasfoodislove Can I please ask you one question since you use so much fresh basil and grow your own, I just bought an organic small basil plant I live alone so I don’t use it every day can you tell me how to keep it alive and hopefully fresh, I googled and it said to water it like once a week is that correct?       That’s a great question because I had many plants die. Move the plant to a larger pot and add organic soil. Place in a sunny window and water once a week. I use terracotta pots, they’re inexpensive and better than plastic because they’re breathable. Hope this info helps. 🥰

      Hi Angela, thank you for watching. The first important thing is to use the right potato. You want a dry type like Idaho baking or Russett.       I’ve never tried but if you spray them with oil I’m sure you can.
