DAPKA/DABKA KADHI PAKORA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serving 2
Ingredients:
For Kadhi
1 cup Curd, beaten, दही
2 cups Water, पानी
Salt to taste, नमक स्वादानुसार
1 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Gram flour, बेसन
For Pakode
1 cup Gram flour, बेसन
⅓ cup Curd, beaten, दही
¼ tsp Carom seeds, अजवाइन
A pinch of asafoetida, हींग
½ tsp Turmeric powder (optional), हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादानुसार
Water as required, पानी
2 tbsp Coriander leaves, chopped, धनिया पत्ता
½ tsp Baking soda, बेकिंग सोडा
1 tsp Oil, तेल
For Tadka
2 tbsp Ghee, घी
¼ tsp Fenugreek seeds, मेथी दाना
4 Dry red chilli, सूखी लाल मिर्च
1 tbsp Coriander seeds, roughly crushed, धनिया के बीज
½ inch Ginger, chopped, अदरक
¼ tsp Asafoetida, हींग
For Garnish
Coriander leaves, धनिया पत्ता
Process
For Kadhi
In a large bowl, add curd, water, salt to taste and whisk it properly.
Add degi red chilli powder, turmeric powder, gram flour and whisk everything properly to make sure there are no lumps, transfer this mixture into a kadai.
On medium flame keep stirring slowly.
Onces the kadhi start boiling, make small balls from the batter and drop them gently into the boiling kadhi.
Cook on medium flame until the dapkas start floating on the top.
Transfer the prepared tadka to the kadhi. Onces it gets thick.
Switch off the flame. Garnish it with coriander leaves.
Serve hot with rice.
For Pakode
In a large mixing bowl, add gram flour, curd, carom seeds, a pinch of asafoetida, turmeric powder, degi red chilli powder, salt to taste, water as required and mix everything well.
Make sure the batter is semi thick
Add coriander leaves. In a small bowl, add baking soda, oil mix it well and transfer this mixture into the batter and mix everything well.
For Tadka
In a pan, add ghee once it's melted. Add fenugreek seeds, dry red chilli, crushed coriander seeds let it splutter.
Add ginger, asafoetida mix it well.

Hello Ranveer, Namaste. My mom's from Lucknow and she is amazing cook and would loved to feed neighborhood and tell stories about food. She is 78 and suffering from Alzheimer back in India. I always thought I will write all her recipes down one day . I am in US and never got that time and she is now cannot tell them due to her state. I keep watching your videos specially all dishes from Lucknow and your stories interlock with what mom used to tell. I want to tell that you have become so special for our family. You are able to revive my childhood memories that I will be able to pass down my daughter. We love you and support you.

Dear chef, I have become a huge fan ever since I chanced upon your channel. I love the narrative and the joy with which you cook, sounding so down to earth like a family member. My request is that you also highlight tips such as temperature (low/medium/high flame) at which food needs to be cooked e.g. here at what heat the Kadhi should cook so it doesn't break up and how we will know the right time to drop the pakodas so they get cooked without disintegrating etc. Loving your channel and am trying out a few recipes with success, looking forward to many more, please keep at it to help people like me cook simple yet delicious home cooked food. Mathani used to make butter. I have seen my naani make it and she used to make us drink this lassi only, good for stomach. "Mere under ka punjabi", same here my mother puts haldi in everything, even in sabuna khichdi. I am not as old as you, RB, so whenever I watch any of your recipes in between my classes and then tell my mother that you made this food today she says that I don't even need to take classes from her before getting married.
