Yeah, I'm aspiring to be a game Dev (or a software developer at least) and seeing these videos are really cool and they help me understand how development of a game happens (keep up the good work tetra!)
Fun fact sometimes the mii you’re against can spone with a shoe instead of a paddle. You can also use a code to get your mii to as well( At the "Select a Mii" screen before an event starts, hold 1 while pressing A to choose "OK." You can let go of 1 when you see the black warning / info screen. This will unlock a shoe as a paddle for Table Tennis Match)
2:25 Yellow probably refers to the undertone of the skin. The graphic shows skin that isn’t as pale as the default male Mii, so that’s probably meant to be Guest C (who is identical to the default male Mii save for having a different skin tone identical to the one in this graphic).
It's also possible that Japanese people see the Mii as more yellow. I've heard they see Philippinos (sp?) as orange even though most Americans see Philippinos and Japanese (at least the ones we usually see*) as the same color. *There's actually light skinned and dark skinned Japanese people but Americans usually see darker skinned Japanese in media.
I would argue that the 'wiimotes in the ping-pong paddles' theory is actually not unlikely at all! It seems like the kind of cute, quirky detail that game devs would want to include; it likely got cut due to either some kind of technical difficulty (took too much memory, graphically interfered with some surrounding graphics in a distracting way, some kind of weird tech issue that made it not work for some unknown reason -which happens more than you'd think- ) or it could have just been because 'It ended up looking weird', or something obscure like making sure nobody thought their wiimotes should come with paddles, or they thought it would be confusing to young children, etc. That's just my take as an amateur game dev.

the 90° and 'inverse slopes' aren't to test riding the bike on them, they're to test riding the bike *beside and under* them; in other words, to test and debug *collision* - Devs likely don't want players to be biking next to a wall that has a wall that angles 88° outward one monent and then falling through the world, or slipping through the wall, the next moment due to poor collision handling.

After trying to make a game myself, I can tell you that collision handling is very, very hard. Having a test room is a good way to test if everything works properly.

I think there was going to be a monster mode and one of the bosses was this place holder mii, but it was messes up, like if you Photoshoped a ton of limbs on it. There was no face so that and the way it moved was uncomfortable. Some other thing that are not as interesting was a DS / DSi build, which had some Mario Kart DS assess for some reason... If someone reminds me later I might post more, that is if I remember more

"Remote Mii" likely refers to how you can store Mii's on the Wiimote, so it was likely intended at a point that Skydiving would be able to use the Mii's that you could save onto a Wiimote and that feature was to test it, however it likely fell through at some point as to my knowledge Skydiving is unable to pull Mii's from the Wiimote

My guess for the effect at 3:30 is that it would have been used for the timer on the rings in Power Cruising, due to the blocks, and that it would have changed color the lower the timer got.

I think the debug menu for skydiving was just then testing the mode and getting everything too work, along with some of its textures. Like the one at the top is the base physics for the mode, and remote jacket and remote mii are either getting the models to move with the Wii remotes direction, or to have the transparent wii remote that appears at the start of the game work with the miis and the jacket on the miis. After they finished all of it, they took it to the place you would find it in game and removed it from the debug menu so that no one else at Nintendo would work on it from the debug menu and only from the actual mode. But that’s just my theory.

I think maybe the skydiving debug menu is meant to test pre-rendered instructional videos. There's a video tutorial in the game for how to install the Wii Motion Plus accessory, so maybe there were more videos showing aspects of the skydiving game, as well as the Wii Remote's rubber jacket and ability to store Miis on the remote. Just speculation, though.

An easter egg is that you can hear the Super Mario gameover sound if you fly with the airplane near a collection of houses on the island. It's hard to explain where it is but it's very rare for the sound to play.

The last two options for the skydiving debug menu seem like they could’ve been the Wii Motion Plus jacket video and something pertaining to the transparent Wii remote that sometimes appears over your character.

"Chanbara" is a sport that is very similar to swordplay. It is most likely an old name made for the game in some sort of E3 test. And yes, Chanbara is what it's named in Nintendo Switch's new game, Switch Sports, but it apparently doesn't use Mii characters????
