Altough its clear origin Tiramisù is well diffused all around Italy. The recipe in the videos has 3 big mistakes: no vanilla at all, no warming of the eggs (use only super fresh eggs!!!!!), no salt and sugar on then egg whites. Amaretto is ok but cognac is the original add-on. First attempts on this dessert were made for former italian royal family.

This is the original recipe, always the best :D you can try using Pavesini (if you can find them) instead of ladyfinger biscuits, I prefer that way because they make tiramisu very creamy and sometimes ladyfinger become too dry if you have not enough cream :)

It was a tad too sweet for us, i would reduce the amount of sugar in the mascarpone cream as the biscuits are already sweet. I made the tiramisu 1 day before so that all of the flavours of the different ingredients can merge together. Stale tastes goood!
This recipe has an excellent combination of difficulty, respect of the traditions, and pleasure to do it. You truly know your job! I haven’t yet tasted as it is still cooling but I really enjoyed to prepare it, thank you!
Guys, don't be scared of raw eggs, just be sure that the eggs you use are fresh! Trust me, I'm Italian and I've done tiramisù (lift-me-up in Italian, in case you were wondering) a million times! I don't even cook the yellows, I just beat them. If you can't find mascarpone you can use whipped cream (but it's not the same, I'm sorry :( ). Instead of lady fingers I like using plain biscuits because they stay crunchy, while lady fingers absordb too much coffe for me and get too spongy. I never put the alcohol in it, so it's something you can easily skip! =)

I use the same recipe. But also add zest of 1 lemon into the egg yolk mixture and also 1 tbsp lemon juice when mixing in mascarpone. My version is non-alcoholic (hate to spoil it for the italians) so obviously omit the Amaretto.

At 0:30 , can someone explain this process? My eggs coagulate on the bowl sides while the rest never go above 50°c. What exactly is the purpose of this procedure? Can I skip the simmering pot and still have a thick texture?

Hey, just wanted to mention that only the type of ladyfingers should be Savoyardi. The clarification is necessary because in USA, for example, ladyfingers is not necessarily the same as Savoyardi ladyfingers. There are brands here that are completely different (more like biscuits with nuts) and won't work even though they are marketed as ladyfingers.

Is that temperature enough for the egg to be cooked ? & if I substitute the egg whites with cup of whipping cream, should I put it with the egg yolks in double bath ?
the temperature is enough to remove any risk for the yolks.. if you use whipping cream leave the whites for another use.. I usually freeze the whites and use on various desserts like pavlova... meringues.. macarons.. etc

It's always so nice to see a tiramisu recipe without whole cream. Don't get why ruining it by making it heavier when it is definitely not needed.
