The video was actually filmed almost a year ago, but James wouldn't publish it until he had a chance to convince the world that decaf can taste good and that pulling longer shots makes more coffee flavor come through. It's the long game!
my advice as an italian is to put the cocoa powder before resting it, this gives it a chance to hydrate and give a nice chocolaty taste, so that when you eat it you don't have a powdery and tasteless cocoa in your mouth
I can add something here. Add shards of dark chocolate (how much or how little you like) throughout the tiramisu when you assemble it, for that extra chocolaty crunch.

The insulation properties of the cooler means that water (which can be heated to a desired temperature) will stay at that temperature for a decently long period of time without losing much heat. This method was extensively tested by j. Kenji Lopez-Alt and shown to work quite well.

Which is to put the eggs into a bowl and cook for 10 sec intervals stirring in-between until the eggs reach desired temp. 6:01 for the coffee could you use the same cometeer coffee capsules that chris young uses to make his hot/cold coffee?
This is like a nerded out version of that La Beccherie recipe that you shared some time ago. I've been making that one regularly since then and it's been absolutely delicious. My wife doesn't like coffee so I've also made a version with Chai. It's difficult to get it strong enough but the flavours work surprisingly well.

Use a double boiler to make a sabayon instead, only requires a bowl and a saucepan instead of a sous-vide thing.

If you have a new instant there is a sousvide function...yes you need one.

You could use Cometeer. They’re 26g and are 13% strength - so if you add 16.5g of water to each one then you should get to 6% strength.
