When I worked at an amusement park, I remember I got transferred from the normal building I worked at to a spot that mostly sold funnel cakes for the day cause they needed extra people. I remember we had some temp employees that showed up for the day and there was this older Filipino guy that worked with me at the funnel cake station. When I first tried it I remember swirling it around, and he told me that if I did it that way, it wouldn't sit right/fall apart or float away, so he showed me the zig zag method in layers. We also used those rings to make sure we had proper circular shapes so that they can get topped with cherries, powdered sugar, whipped cream or chocolate. That guy I worked with was pretty cool, I'll never forget that day.
I make these at home all the time. They're so yummy!! Edit: I always clean out an old Heinz ketchup bottle and use it for my batter. Works well if you don't have a funnel or to store any leftover batter. Also, a bit of cinnamon in the batter is ah-mazing.

Then the next fair would come and my brain would completely forget about the last time. I’m very glad my brain didn’t include the upset stomach in the the dream the other night.
There's a fair in my hometown, but since it was canceled this year, some of the food stalls have been set up in different places around town. They also recently built a drive in theater on part of the fairgrounds. It's not quite the same of course, but I like seeing the little reminders of our normal fall traditions.
As a Northeastern Pennsylvania resident, we have funnel cakes all year round, but even more so in the summer and fall. Powdered sugar is the most traditional topping, but you should try it with granulated sugar and cinnamon!! That’s my favorite. 😋 In the fall it’s delicious with freshly baked apples & cinnamon as well. 😋 You can use pancake batter, but in my area you can also buy funnel cake batter pretty much anywhere...it usually comes in a bottle with a squeeze top and you just add water and shake. Then fry it up for yummy goodness!!!

Yes Emmy! We make funnel cakes all the time at my house using a complete pancake mix and a washed out chocolate syrup bottle to dispense the batter. I had a friend who used to work the fair every year. One year she worked the funnel cake truck and told me that those people use pancake mix, because all you have to buy is the mix and water, it's cheaper and easier and they don't have to worry about their recipe getting copied. That's when we started doing it at home!

I've been making them for the past 20yrs for my kids. I've tried many recipes bur find a thinner pancake batter works best with the right size funnel. ALWAYS an annual favorite no matter how old the kids get!
Man I so want one now. A funnel usage trick : place the handle end of a wooden spoon to sit into the funnel opening. To use: set in cup and fill, hold with one hand while the other lifts the spoons slightly up ( don't remove as it'll create mess) to allow the batter to pour down. Drop the spoon back down to stop. This isn't too messy and keeps your hands clean.
As a teenager in the '70s, we made funnel cakes with Bisquick in a half gallon milk jug , poured into a funnel. Dust them with confectioner's sugar , maybe sliced bananas as well. A cool weather Fall and Winter thing, as I recall.
In Germany it is called Rosenküchle, because it kind of looks like a rose. We dip rose shaped iron in the dough and afterwards in the oil. That is how we make Rosenküchle in Germany.
Emmy! I come to realise we have a funnel variety in The Netherlands as well! In the northern part, the provence of Frysland they have ”drabbelkoek”. It is a crispy cake of a very thin drizzele in hot oil. These little ”cake” is draped over a ball shaped item when still warm so when it cools it hardens in a somewhat hollow form. Yummie I looooove them!
Thank you for going into the actual proper eating method as well - many see a funnel cake and think, "Wow, that's so much for one person." Well, it isn't proper form to eat one by yourself. It is a treat to be shared with your family or friends when you visit the fair so everyone gets a small piece or two from the main funnel cake. The culture revolves around the sharing and "breaking bread" aspect of the treat. :)
There are pancake batters made like that! They come as a powder in a jug and you just add water and shake the jug to mix it. They're great for camping!

I used to love going to Knotts Berry Farm Halloween Haunt. Every year, I'd get a funnel cake with boysenberry perserves instead of powdered sugar. It was heavenly.
I've tried the yeasted dough version and can say it's so much better. There's a bit of a chew to it on top of the crunch and the only reason why it's switched to chemical leavening is that it's faster to put together. Which, works well for fast turnover at a fair. But, at home, yeast.

Emmy, I worked for a lovely couple many years ago that owned a funnel cake stand. Your batter is fine, but you're starting in the wrong place. Make a large circle around the outside edge of your ring, then swirl around once or twice, then do some crisscrossing. The large outside ring helps dictate how big it will be and helps hold everything together. Don't swirl so fast when starting. That's why your cake is breaking up. Slow and steady. And try adding your powdered sugar as soon as it comes out and is still hit. Some of it will get melty and is scrumptious. 😘
Yes, I've made mine with pancake batter. I add vanilla flavor to the batter and it tastes just as good at the funnel cake I used to get at Magic Mountain.
I've tried it both ways. But if you use pancake batter, get the kind that you just add water to. I use really warm water and not cold. I also don't use as much water because the batter should be thick. I also use a little bit of oil in with the batter. It turns out so good.
Just made this recipe, it's great! Just a heads up to anyone else who is considering making it - I feel like it makes a LOT, so I'd recommend halving the recipe unless you're feeding a lot of people.

About a month ago I had a state fair themed day with my mom. We had funnel cake, homemade corn dogs and lemon shakeups! Very fun especially during these times. Not the most graceful but for my funnel cake I just used a zip lock bag with the corner cut off. You just have to move fast. But very delicious!
My favourite way to have funnel cake is always with a little dollop of soft serve in the middle, powdered sugar and a little bit of strawberry. The screaming hot cake with the cold ice cream is just perfect. I haven’t had one in like 8 years and you just ignited a serious craving!!!!! Now I want a red candy apple too... and candy floss... fresh potato chips...

In Germany it is called Rosenküchle, because it kind of looks like a rose. We dip rose shaped iron in the dough and afterwards in the oil. That is how we make Rosenküchle in Germany.

Emmy! I come to realise we have a funnel variety in The Netherlands as well! In the northern part, the provence of Frysland they have ”drabbelkoek”. It is a crispy cake of a very thin drizzele in hot oil. These little ”cake” is draped over a ball shaped item when still warm so when it cools it hardens in a somewhat hollow form.

Thank you for going into the actual proper eating method as well - many see a funnel cake and think, "Wow, that's so much for one person." Well, it isn't proper form to eat one by yourself. It is a treat to be shared with your family or friends when you visit the fair so everyone gets a small piece or two from the main funnel cake. The culture revolves around the sharing and "breaking bread" aspect of the treat. :)

I recently saw funnel cake mix pre-made in a bottle with a funnel in the cap.
There are pancake batters made like that! They come as a powder in a jug and you just add water and shake the jug to mix it. They're great for camping!

When I was in highschool I got really into baking in home ec. I used to make funnel cakes for my friends and classmates all the time.
Yes, a bigger funnel opening works best. You can get funnel cake funnels specifically for this. Got one alone with a smaller more individually sized metal ring as a gift and it’s great!!!

I made these today for my family and they were a huge hit! Lightly flavored the dough with vanilla and almond extracts, as well as cinnamon and nutmeg.
I used to love going to Knotts Berry Farm Halloween Haunt. Every year, I'd get a funnel cake with boysenberry perserves instead of powdered sugar. It was heavenly.

Put the batter in a cleaned out ketchup bottle. Makes pouring much easier.
I've tried the yeasted dough version and can say it's so much better. There's a bit of a chew to it on top of the crunch and the only reason why it's switched to chemical leavening is that it's faster to put together. Which, works well for fast turnover at a fair. But, at home, yeast.
It was decent made out of pancake batter, definitely would need to add extra sugar or use sweet toppings!

I love that shirt BTW. Also, great for the theme of a State Fair. I gotta tell you about the largest outdoor event in Europe, The Irish Ploughing Championships. Originally about Ploughing, ane it still is, but now it's this giant fair of national and international business farm machinery sales, to every type of farmers market sales you can probably think of, the list goes on and on, and it lasts for I think five straight days Wednesday to Sunday, in generally a different location in Ireland every week.

Emmy, I worked for a lovely couple many years ago that owned a funnel cake stand. Your batter is fine, but you're starting in the wrong place. Make a large circle around the outside edge of your ring, then swirl around once or twice, then do some crisscrossing. The large outside ring helps dictate how big it will be and helps hold everything together. Don't swirl so fast when starting. That's why your cake is breaking up. Slow and steady. And try adding your powdered sugar as soon as it comes out and is still hit. Some of it will get melty and is scrumptious. 😘

Yes, I've made mine with pancake batter. I add vanilla flavor to the batter and it tastes just as good at the funnel cake I used to get at Magic Mountain.

I've tried it both ways. But if you use pancake batter, get the kind that you just add water to. I use really warm water and not cold. I also don't use as much water because the batter should be thick. I also use a little bit of oil in with the batter. It turns out so good.

About a month ago I had a state fair themed day with my mom. We had funnel cake, homemade corn dogs and lemon shakeups! Very fun especially during these times. Not the most graceful but for my funnel cake I just used a zip lock bag with the corner cut off. You just have to move fast. But very delicious!

My favourite way to have funnel cake is always with a little dollop of soft serve in the middle, powdered sugar and a little bit of strawberry. The screaming hot cake with the cold ice cream is just perfect. I haven’t had one in like 8 years and you just ignited a serious craving!!!!! Now I want a red candy apple too... and candy floss... fresh potato chips...

When you said it was made with yeast, that's an indication the recipe is old. Yeast as a learning agent was readily available, from home brewing, for example. Baking powder was used from the early 1850s.
