And whilst I think that what you are saying is true, from my limited experience with Indian food, I feel like no matter what (sweet/sour/spicy) the basic flavour palate remains the same with most of the dishes and has resulted to me perceiving it as less diverse. I guess that's an inherent advantage with recipes that have limited ingredients, they allow for more combinations and more robust flavours.

Let me repeat, NO other food in the world compares anywhere near to the depth and range of Indian food. I suggest you start with Biryani, and then have some mango lassi and finally some sweet delicacy like rasmalai or rabri. You should enjoy it!

Italy is very good but not remotely as diverse as Indian food which can range from sweet to sour to hot and spicy.
