Detto ciò, non possiamo lamentarci del "made in Italy" preso a schiaffi da porcherie inventate dagli americani (spaghetti & meetballs, fettuccine Alfredo e cose di questo tipo) se poi siamo noi italiani i primi che anzichè portare lo straniero verso i nostri sapori, adeguiamo i nostri sapori al loro mercato. Se continuiamo così, anche una delle pochissime cose buone della globalizzazione sarà deleteria. In Italia mangeremo sempre etnico adeguato al nostro mercato e i nostri piatti, concettualmente semplici e minimali, saranno venduti all'esterno conditi con l'ultima delle salse agrodolcipiccantisalate che nulla c'entrano con la nostra cultura gastronomica. Noi italiani, popolo tradizionalmente senza memoria, stiamo dimenticando che una volta il turismo in entrata verso le nostre città aveva l'unicità dei nostri sapori come anello trainante. Più faremo credere all'estero che i nostri sapori siano qualcosa di "corrotto" e somigliante ai loro, meno continueremo a essere unici e ambiti a livello di turismo gastronomico.
