I haven't noticed anyone comment about his knife skills. As an amateur fishmonger it's so amazing to see this guy work. How precise and efficient he is at cutting. Also he practices good knife safety, always turning the blade away from him towards the counter, and just the speed he does it! It's mesmerizing.

Just got back from Florence last week...I ate there. It was great! They actualy have 3 store fronts and each one had a line...and this was on a Tuesday. Very few places to sit inside. Most of the people just sat the curb in front...thats what I did, with a beer. And at the end of the street is the Piazza Vecchio with all the great statues and the Zeus Fountain.

But I think the reason is that our "pizza" has too much stuff on it. Sometimes even 6-7 different ingredients + the salsa and cheese. And of course gastro here is not ashamed to ask sh*t ton of money for fancy food.
All' Antico Vinaio is the most reviewed place on Trip Advisor, It has the world record. And of course here in Italy is a must for every sandwich lover.
They are opening a location in Las Vegas at the end of the month. Far off the strip and 10 minutes from my house. I've never been so excited about a new restaurant.

The white one you see is cheese, which variates depending on what you ask, the brown one are mushrooms/truffles and then there's the meat, which again changes depending on the customer's desire. Every ingredient is selected to guarantee the best experience

its great... something so SIMPLE... and BASIC!!! which the whole world eats already.... these guys have become famous for sandwiches LOL...
BRAVO.... there is nothing special about these panini.. they are just sandwiches.. actually there are better sandwich shops all over the world..
BUT... what makes these guys different is.. they keep it simple.. with local ingredients. and make them fresh to order...
