Lovely Rik, I will make this. Last week I made a pea and ham soup, made with smoked gammon joint leftovers and mushy peas. It was an experiment but turned out great. I just love soup and could eat it everyday in the winter.

A large portion of the US would be grateful for such a warming, delicious meal after the huge winter storm we just had. IMHO, roasted thighs make the best soup. I take the skins, bones and veggie trimmings (including the clean onion skins) and simmer on the side to make more broth. Zero waste. We're back on the straight and narrow so I'll be making the veg version. I'll probably add a can of diced tomatoes, a parsnip and some frozen corn. I've no tagliatelle so it'll be plain wide noodles but the tagliatelle made it look so rich and lux.
I like the skinny noodles and liptons got good soup pkts that can also be added in to homemade also adding enough garlic and onion salt and enough black pepper, the celery sure good too and can add celery salt too, sprinkling of herbs also fry some chicken chunks and vegetables in some bacon grease
Love this Rik. I pull the skin off and fry it to a crisp on the hot plate with a weight on top! Often with a whole Chicken I simmer a whole one with a few spices and it breaks down. Right to soup. Your recipe is easy and filling! Chuck everything in it and your set. Cheers mate!

That's what I had for lunch today. Since I live alone, I make a big pot and freeze portion sizes in freezer bags for days like today, or when I don't feel like cooking.

I like making soups because they're easy to make...especially during the cold winter months. Nothing like a hot bowl of soup to warm you up. Nice with some dumplings or bread to dunk in the soup. Very satisfying!
Great soup to use up the random noodles remaining in my larder and to creatively consume the vegetables in my refrigerator and storage bins which are calling out for immediate consumption. Making a satisfying restorative soup is definitely a life-skill.
Homemade chicken noodle soup, when done right, is one of the joys in life. Eaten with a good cold cut sandwich with lots of iceberg, and a cup of coffee or tea, and it's pretty much perfect. I can't stand celery, but I like its flavor, so I always cook it to mush, I know...weird right? :) I like using mini shells or broken tagliatelle...sky's the limit. I like lots of parsley, fresh is best and try to keep the leaves whole but use what you got. This is a good tried and true version, though I like more broth...Goodn' Rik :) Also...I don't know why...for some reason it tastes better eaten with one of those Asian style soup spoons :)
I love how you teach how a real experienced chef really cooks. For the last 21 years of my cooking career the restaurant was seafood with only an aged ribeye, and half a roasted organic chicken offered for any non fish eaters that might be dining with friends, but the chef/ owner bought huge boxes of chicken bones for stock making which would be roasted off, he is a very good chef, and his food was delicious. Good soup my friend as usual.😊

Usually by the armchair warriors that I have no time for. I set out to help as many as I can - I'm getting there. Many lovely folks on here that have made the recipes with success. I made a turkey version the other day, using up some frozen dark meat leftovers, but I added a diced fresh parsnip instead of potatoes, and used vegetable broth. I'm pretty chuffed at my success. Perfect winter nosh, and I'll do the chicken version next time and use spuds. 🤗
Just got done having this for lunch today. It was easy and yummy and even my husband commented on how good it was. He doesn't do that very often. The only thing I changed was omitting garlic. I started it at 11:50 AM and by 1:30 PM it was ready to eat.
@@dee2251 i don't use thyme for some reason, so I'm not sure how it would taste with fresh ginger and chilli flakes. i might have to give it a try with the thyme.
Fresh ginger has its benefits, but in my opinion even two thin slices of fresh ginger in that Chicken Soup, would NOT be called chicken soup any more. Fresh ginger is very potent in flavour.
@@Jennifer-r2211 its definitely fine in a chicken soup and very common on this side of the world because its basically an asian recipe. in fact when I cook chicken soup I simply sauté onion, ginger and a bit of chilli, drop the chicken in (cubed) add the water, and then just add vegetables, salt and pepper, sometimes i use noodles other times rice. tend to not use potato though, just whatever vegetables are on hand. and the beauty of it is that you can leave it stay in the pot and just next time you heat it up you add more vegetables (cabbage or chinese cabbage), greens.. spinach, silver beet. can also add soy to the soup as well.
Currently on the North Yorkshire coast it is colder than a penguins chuff,so tonight I decided to give this a go. I had to do a slight variation on your recipe as I will always maintain that celery should be banned as a criminal ingredient. I replaced that with a couple of chopped potatoes and I added a teaspoon of Chinese five spice to the stock. It turned out delicious and it certainly won't last three days in the fridge as most of it has already gone. 😋
Fantastic, but since there’s more solids and less liquid is it a soup? It’s almost a noodle stew. But it looks delicious and I’m cooking it this weekend
thank you for sharing. personally i would cook the chicken in the soup to get all the chicken flavour and especially the chicken fat under the skin. and I whisk 2 - 3 eggs, season them with salt and nutmeg and add them carefully to the soup. carefully means, not to stear to much otherwise the soup becomes cloudy P.S. were are the peas??? ;)))
I was wondering what to do with those chicken thigh fillets and that not at its best veg that needed using today. It's in the pot as I type. Going to let it bubble away until I'm ready to throw the noodles in. Another winner, mate. How about a Cullen Skink? Served in a mug with crusty bread...
I like the soup very much. Fits the season. But, why don't you let the meat cook in the broth so that it can give off flavor? You can then take the meat out and chop it as shown and add it back at the end.
You can, but sometimes if it simmers a long time all the flavor from the meat goes into the broth. It's a technicality, I suppose since you're eating it all but the pieces of meat have less flavor by themselves and it does affect the texture. Modern thighs have less depth than the mean old hens we used to use for broth, if that makes sense. What I do is roast the thighs and use the skins and bones along with veg trimmings to simmer some broth while I'm making the soup then add in the extra broth at the end.
You can indeed just chuck it all in the pan. I'm not a fan of boiled chicken. I find it tasteless. All the bones and scraps I use to make chicken stock. they are roasted further and then boiled in a big pot to make the stock. Thank You. Best, Rik
I totally agree with you about people bleating about how they cant afford to feed their children. If they hadnt made the mistake of feeding them ready made instead of home made, maybe their children would have appreciated cheap nourishing food, like we did, instead of filling them up with crisps and rubbish in between their meals. They maybe just hungry enough to enjoy healthy food.

The soup resembles Polish Clear chicken soup. Their soup name is Rosół. I'm sure yours is as delicious as the Polish Rosòł.

I made a turkey version the other day, using up some frozen dark meat leftovers, but I added a diced fresh parsnip instead of potatoes, and used vegetable broth. I'm pretty chuffed at my success. Perfect winter nosh, and I'll do the chicken version next time and use spuds. 🤗

Just got done having this for lunch today. It was easy and yummy and even my husband commented on how good it was. He doesn't do that very often. The only thing I changed was omitting garlic. I started it at 11:50 AM and by 1:30 PM it was ready to eat.

Thyme is anti-microbial and ant-inflammatory and traditionally used for coughs and cold. I’d personally leave it in, but each their own.
@@dee2251 i don't use thyme for some reason, so I'm not sure how it would taste with fresh ginger and chilli flakes. i might have to give it a try with the thyme.
Fresh ginger has its benefits, but in my opinion even two thin slices of fresh ginger in that Chicken Soup, would NOT be called chicken soup any more. Fresh ginger is very potent in flavour.
@@Jennifer-r2211 its definitely fine in a chicken soup and very common on this side of the world because its basically an asian recipe. in fact when I cook chicken soup I simply sauté onion, ginger and a bit of chilli, drop the chicken in (cubed) add the water, and then just add vegetables, salt and pepper, sometimes i use noodles other times rice. tend to not use potato though, just whatever vegetables are on hand. and the beauty of it is that you can leave it stay in the pot and just next time you heat it up you add more vegetables (cabbage or chinese cabbage), greens.. spinach, silver beet. can also add soy to the soup as well.
Currently on the North Yorkshire coast it is colder than a penguins chuff,so tonight I decided to give this a go.
I had to do a slight variation on your recipe as I will always maintain that celery should be banned as a criminal ingredient.
I replaced that with a couple of chopped potatoes and I added a teaspoon of Chinese five spice to the stock.
It turned out delicious and it certainly won't last three days in the fridge as most of it has already gone. 😋

personally i would cook the chicken in the soup to get all the chicken flavour and especially the chicken fat under the skin.
and I whisk 2 - 3 eggs, season them with salt and nutmeg and add them carefully to the soup. carefully means, not to stear to much otherwise the soup becomes cloudy

I like the soup very much. Fits the season. But, why don't you let the meat cook in the broth so that it can give off flavor? You can then take the meat out and chop it as shown and add it back at the end.
You can, but sometimes if it simmers a long time all the flavor from the meat goes into the broth. It's a technicality, I suppose since you're eating it all but the pieces of meat have less flavor by themselves and it does affect the texture. Modern thighs have less depth than the mean old hens we used to use for broth, if that makes sense.
What I do is roast the thighs and use the skins and bones along with veg trimmings to simmer some broth while I'm making the soup then add in the extra broth at the end.
You can indeed just chuck it all in the pan. I'm not a fan of boiled chicken. I find it tasteless. All the bones and scraps I use to make chicken stock. they are roasted further and then boiled in a big pot to make the stock. Thank You. Best, Rik

I totally agree with you about people bleating about how they cant afford to feed their children. If they hadnt made the mistake of feeding them ready made instead of home made, maybe their children would have appreciated cheap nourishing food, like we did, instead of filling them up with crisps and rubbish in between their meals. They maybe just hungry enough to enjoy healthy food.
