I’m an eggplant fan,I have made stuffed ones,but never rolled like this. I often take the thin Japanese eggplant roll cut them brush with olive oil,and spices,then bake in my toaster oven,they get really sweet that way. I can eat them just like that,or make a Chinese sauce,or an Indian one,I like all sorts of eggplant dishes.😊

I never much cared for eggplant, but this one looks good! Totally unrelated question: can you envision a Southern American country (sausage) gravy mix (like your custard mix) that you can just mix with water and have an "instant" country gravy? I can make it from bacon or sausage drippings, but sometimes I'd like to just mix up a quick gravy for breakfast. How would you go about that?
That looks gorgeous, have seen loads of your vids and dont know if you have done this, but have you done lasanga but using sliced aubergine and or courgette instead of pasta?.
Aubergine is one of my favourite vegetables- love the soft slimy texture. Question why have you soaked them in salty water because they have now bred the bitterness out of them that they used to have which they needed to be salted to get rid of it. Or have you done it for another reason?
Should also add tell all how delicious the food tastes.😋😋😋😋😋😋😋😋😋😋 Eggplant is a versatile vegetable . First ate it in Spain. Cooked in olive oil with garlic, tomato 🍅 and bread rolls. Been fan seen.
