    Looks wonderful! I make them as well or another version I call Mexican lasagna/ corn tortillas instead of noodles. The main difference is I roast my peppers and tomatillos then blend for the added flavor.

    Congratulations for your first home made enchiladas!! They look great!! Just one advice: next time do the same but with corn tortillas. Being a mexican (also living in Aguascalientes) I have never ate enchiladas with flour tortillas!

    I make these all the time, my mexican family taught me to cook the meet in the raw salsa, and it made the flavor go through out, before this i would always do it separately. But it truly made a difference.

    Your enchiladas look awesome. We have enchiladas suizas in all the Tex-Mex restaurants but they are covered in a white creme sauce - delicious, but yours give a whole new meaning to these enchiladas for me. One of these days when I have time to cook I definitely want to try them. Thanks for sharing. Loved your stories too.

    I find that when I use tomatillos with the chile and cilantro, it gives it that little tangy taste, really good, after that I don't need too much lemon, cheers!

    Love the chapulines story! I actually do like them, but I have only had them as a garnish with mezcal and sal de gusano. I can't wait to try a chapulines taco!! My hubby, not - so - much - LOL

    Hi guys, nice to see my state Agiascalientes, you Guyd need to go at my born town , Calvillo Aguascalientes, is one of the Pueblos Magicos, to Check the local Honey beer, chamucos, Nieve del Popo , Guava pizza, guava liquot, Crema de Guayaba, then all made from guava fruit ,then go to it at Malpaso, is a Wáter Reservor to irrigate Guavas

    in central mexico the green one you just used its call tomate and the red color one its called jitomate and the sauce you made its great for it but depending on how you like them you use or ad a little water on the sauce less greens (tomate, chiles, cilantro etc) to make the sauce less spicy and a little whiter

    Aww, Enchiladas Verdes is actually my husband’s favorite Mexican dish 🤩 I haven’t been able to find Queso Manchego here in the Bay Area 😏 I’m from Tijuana and I use chiles jalapeños, serranos and TOMATILLO 👍🏽 and even have a video here in my channel where I am making salsa verde de molcajete. Are those Tortillinas Tia Rosa flour or corn? Because when I was living in Mexico that brand (Bimbo) only made flour tortillas. The Enchiladas are supposed to be with corn tortillas, preferably not fresh but from a day before. 💖 tfs. Stay happy 😊

    When I'm suuuuupr broke, like 2 days before pay day, I make 'Oxxo' Enchiladas (con frijoles). I go to Oxxo and buy 1 small can of salsa verde, a packet of 12 flour tortillas, a packet of refried beans, 1 small container of crema, 1 small queso cheddar, a couple of limes. It comes to around 100 pesos (5US). 😉🤘🏼 At home I layer the ingredients like y'all did, bake and I'm eating deliciousness for 2 meals. ¡Provecho!

      That sounds good too:-). I don't doubt you can try making these; the most expensive ingtrdients are the cheese and chicken honestly BUT you don't have to get both cheeses and you can use potatoes instead of chicken too:-).

    In Mexico City and Guanajuato a tomato is jitomate and a green tomatillo is tomate....

    I'm new in your channel but I love your videos. Those enchiladas really looks Yummy, maybe the next time you could try it with fresh Corn tortillas and I guarantee it will taste even better.

    I would've grilled the chicken, but I'm sure it still tastes just as good boiled. Plus it doesn't take 45 min. Prolly only like 5 to 7 minutes on each side

    Wow really impressed, much better than samborns enchiladas suizas, thanks for sharing this Mexican dish. In Mexico they are called Swiss enchiladas because they have a lot of cream and cheese. They look very appetizing. Congratulations!!!

    Hi guys, I hope you Well! Just to comment, the correct way to make enchiladas suizas is using Corn tortillas not flour tortillas... I think that would be more funny if you learn spanish for your videos guys.... regards from Baja California Mexico

    As one Spanish learner to another (blind leading blind). I'm 99.9% sure you need to match the gender of the adjective to the noun. Enchiladas Suizas not Suizos.
    I'm just going through the section in Duolingo where I am making that mistake less and less. Just thought I'd share.

    This has nothing to do with your video today but I have to say the Mexico is harder on migrants than the US. I'm in Mexico right now and they will not sell you a bus ticket without a passport. I'm American so I have my passport with me but what if I don't have it? I can't purchase a bus ticket with my US driver's license. Once I got to the bus, the driver asked me for ID again. This made me a bit uncomfortable. I can just imagine what these poor migrants are going through. Mexicans complain about the treatment of migrants but the treatment is worse here. I just wanted to share that with you. God bless!

      You realize all of these measures are introduced in conjuction with the US government right? They're outsourcing their borderwork to Mexicos southern border which did not used to have much of anything down there. I wouldn't be suriprised if they are also working with other governments because this is just the beginning currently there are people from all over the world arriving to cross through mexico to the US.

      @@teddydavis2339 They could be yes how the hell would I know if I wasn't there. I just anwered your comment because these are policies coming from the US. They are afraid of what's to come because it's starting to pick back up again and a lot of countries are hurting from covid lockdowns and inflation.
