I’m known as a skilled home baker and people always assume I make a mean pie crust. And I do….occasionally. Most of the time I go with a reputable brand of frozen rolled crust. Is as good as my homemade crust? No. But it’s pretty good. I always tell people the difference isn’t worth the effort, especially if you put in a spectacular filling. I have no shame about that.
Google 'America's Test Kitchen Pat In Pan pie crust' recipe. It's super easy, tender, and flavorful. I have used it for several years and it's always great!!!
@@Serene80 why would I do that? When I make pie crust I use Julia Child’s recipe and it never fails me. What I’m talking about is the internal algebra that everyone has to do about effort vs payback.
Frankly, I make the best pie crust I have ever eaten anywhere. Use the highest quality lard and some butter and cut it into the flour by hand and roll it only once. It is incredibly flakey and light. AND guess what? I can buy a half decent frozen crust that requires no effort at all--and more important, it requires no TIME at all. Nobody cares anyway.
@@ckahrl Yeah, a fair number of people I know won't eat some or all of the pie crust. I've made pies both ways and people seem to leave the same amount of crust, so to heck with it. I, on the other hand, will eat ALL of a good pie crust.

Wonderful group of pies, Chef! Thank you! I have two things I do. 1. Freeze the raw crust for 15-20 minutes before blind baking. Put ceramic & glass on a cool baking sheet to protect it from oven heat. My pie crusts stopped slumping & getting misshapen when I started freezing. 2. To prevent a soggy bottom, paint the bottom of the crust with egg white or chocolate, depending on the flavor of your pie.

I made the buttermilk pie, and it was very impressive! I had no idea what I was missing out on. I made two with just lemon zest/juice and another 2 with mandarin and lemon. They’re like cheesecake with a bit of lemon meringue but a little less rich than either. In a very good way.
I never heard of buttermilk pie here on the Rez in Montana, but tried this recipe two years ago and now is always served at special occasions, my family loved it! Now I want to try the pecan pie. Thank you!👍🤩😍

Pumpkin pie is my favorite! I always use freshly ground spices (even ginger), freshly pureed baked pumpkin. I won't give up the brown sugar and half and half cream for sweetened condensed milk... but the egg tip is golden! I just may be tempted to add the Chinese 5 spice, though. I am getting ready to do a practice pie with one of the pie pumpkins from my garden. 😋

I do Thanksgiving for a small family so I combine a few dishes. Instead of sweet-potato casserole and pumpkin pie, I do a sweet-potato pie. The extra flavor from the tubers gives a nice earthy flavor. I also do a buttermilk pecan pie that is basically this buttermilk pie recipe + a layer of pecans that float to the top.
And anytime my grandmother used cinnamon in a recipe, ground cloves and nutmeg were always included. Always. I'm the same way, because the scent when the goodies are in the oven, remind me of her home.
We have been making this pumpkin pie for years and it's always great!! It's also easier to find sweetened condensed milk in Europe, evaporated milk is very hard to find. I use fresh pumpkin roasted in the oven because the can of pumpkin just isn't easy to find even at expat shops.

They already go into hen mode over my version: Substituting freshly grated ginger, molasses & turbinado sugar, and doubling the spices. You are right chef John Bulleit is for mixed drinks. Our top shelf at my house is Kentucky Owl from Bardstown Ky. We have to keep a certain standard here in Lexington Ky. Then Other choices here for a bourbon tasting are things like Henry McKenna or Basil Hayden. If you get lucky you may run into a collector that has some Weller Special reserve
I made my first buttermilk pie after you posted it the first time. I have made it every year since. I also make a few more every year for friends and family... This year I made 6!
I will definitely try making my pumpkin pie this way. Last years pie was the old way with evap. milk. Terrible tasting stuff. I always hated making it because they never turned out very well and so I usually skipped the baking and just bought one from the store. I'm originally from Alabama. I love pecan pies, they are truly my favorite. I use pecans pieces, because pecan halves do not cut easily. You may consider that blasphemy Chef John, I'm sure you can appreciate where I'm coming. You can also make a Derby Pie, by adding chocolate chips and coconut.🤯
