You've just enabled me to make potato pancakes despite not being able to physically squeeze enough water out of the grated actual potatoes to keep them from being mushy and disgusting. I've tried for ages to figure out how to make these with literally no upper body strength, and there simply isn't a way, until now. You deserve a g/d Nobel Prize for this hack.
ya know an old family tradition of ours was to have an over easy egg over a tamale because you get the yolk as part sauce that intermixes with the masa and filling. A trade for your hack.

This is similar to what I'd like to try: dehydrating sliced potatoes to avoid the step of soaking and wringing potatoes. However, this is quicker and easier, and I have potato chips on hand. Hey Chef John: I've got one up on you..... Frozen Fries mashed potatoes! Defrost the fries(use thick ones), throw them in a food processor and start adding water. Season with salt, pepper and of course cayenne pepper. Heat them up oven, stove top or microwave. DONE! Happy Chanukah 🕎
I watch this stuff at like 9pm and sometimes stay up till 11pm maybe midnight making this stuff. And of course I eat it and go straight to bed like youre not supposed to. 😊
I'd heard of making potato soup out of those pringles-like processed potato chips because they are basically potato powder pressed in shape, but Latkes was a new idea. Can probably sub the flour for the other kind of potato chips, too.
Thank you Chef John, i believe there is a mistake on your written recipe, it says to use two cups of ground potato chips, and you video says only to use one. When i used two cups the mixture was too dry so i doubled all of the other ingrediencies
This sounds like a good way to use up those small chips at the bottom of the bag that are not as good as the big ones, just collect a few bags worth and make these.
Chef, since potato chips are already very salty could the added amount be too much? I ask bc someone told me crushed up potato chips on top of tuna casserole is good but it was way too salty for me. Is there any reason of cooking them well to put this much salt in?

Another life hack is to use latkes as the bottom of an eggs Benedict in place of a muffin, which is now my preferred go-to!

you start with 2 cups of potato chips to get 1 cup of crushed chips, it's in the written recipe
Consider using peanut oil, if it's available and you can use it fry these.
Think, Five Guys french fries. They are cooked in peanut oil 😊
